A great indicator of quality of any Mexican restaurant is looking at the tortillas, you can tell when they are being made fresh in the restaurant vs store bought. The edges are rough and uneven when hand made and tge dough tastes fresh, machine made and store bought have perfect rounded edges but taste stale and have that refrigerator taste that bread has when it gets frozen and less chewy.
