I’ve been asked this a lot. TURNOVERS
Finally I’ve gotten around to doing some. I’ve made this really easy so anyone can do it. I call it my No Knead. No Nonsense. No excuses Bread Dough 😄
You can use this for a Batch Loaf too. Just shape round Instead. This gives 2 loaves

Recipe:
900g of Strong Bread Flour
600ml of tepid water
40g of Fresh yeast(for dry divide by 3)
2tsp salt
2tsp sugar
50g melted butter
An Alternative final shape on this is to stretch and fold both ends of the dough in to the center then fold the dough on top of itself like a book. This is the proper way.
After the final shaping of the bread give It a further 30 minutes to rise. You can see, I didn’t knock the air out when shaping so It won’t need long.
Bake In a preheated oven at 250 degrees Celsius for 15 min. Turn the heat down to 220 degrees and bake for another 30 minutes
Throw a glass of water on to a hot tray at the bottom of the oven when you stick the bread in. This helps to create moisture which will aid the bread in rising and it will keep it from drying out too much.

OMG Chris that looks fab. Looking at it brought back memories of my childhood in Georges Street by the Long Hall pub then Finglas in the 60s. Turnover and butter. Dangerous picking one up in the shop..I’d have a hole eaten in it by the time I’d get home and be in trouble! Delicious. I’m not sure where to get fresh yeast here in Cardiff but assume dried would work..but how much of it? Your gorgeous girl was certainly enjoying it! Hahaha same here Carol! Yeah go ahead with the dry yeast. Just divide by 3 so about 13g. Here I get dried yeast in sachets of 11g and that does the trick😊

So I’m very interested in making some bread. This looks terrific, and you say things like, this dough anyone can do this, this dough no knead no excuses anyone can do it. But for some reason I’m very nervous about trying it. I get worked up about it and disappointed I haven’t tried yet. My sourdough starter is not working, and I’m frustrated my that. I gave that a go during Covid stay home several times and nothing. So for the person , me! who will try to bake anything once, even made a castle cake for my nieces birthday once, but can’t find the lions courage to try bread, which one would you say I should start with? I think I’m afraid of over kneading or baking it to long. I have a standard kitchen aid. And most basic & a few fun kitchen tools. Thanks Chris!
