Hey Chef Steven - great video thanks - quick question - can I do this if I cannot get "Pink" salt sodium nitrate. and (or) is there a substitute?

The pink salt is what preserves the color. You can use normal salt, but be warned the color will NOT look like normal bacon. I believe you can find the pink salt on Amazon.

It is possible, yet depends on how long you cure it for. Classic prosciutto is 100% complete covered in salt for months. In culinary school at Le Cordon Bleu, we completely covered the bacon in salt for 7 days, then rinse. Perfect!

bacon from store dont use smokers they give the smoky flavour with lqiuid smoke and cook bacon at low temp
