lol this is not light soy sauce. Where are the soy beans? This is sugar syrup, or moscuvado with salt and vinegar. This is how it should be done Ingredients: 1 cup soybeans (yellow soybeans are often used) 2 cups wheat flour 4 cups water Salt (approximately 10-15% of the liquid volume) Koji starter culture (available at some specialty stores or online) - You can also use a small piece of an existing batch of fermented soy sauce as a starter. Equipment: A large glass or ceramic container with a lid (for fermentation) Cheesecloth or a clean cloth for covering the container A weight or a plastic bag filled with water (to keep the soybeans submerged) Procedure: Preparation of Soybean Paste (Moromi): Start by washing the soybeans thoroughly and then soaking them in water overnight or for about 8-10 hours until they are fully hydrated and swollen. After soaking, drain the soybeans. Cook the Soybeans: Transfer the soaked soybeans to a large pot, add fresh water, and cook them until they are tender. This typically takes several hours, and you may need to add more water as it evaporates. The soybeans should be soft enough to mash easily between your fingers when they are fully cooked. Prepare Wheat Paste: While the soybeans are cooking, prepare the wheat paste. Mix the wheat flour with water to create a smooth, thick paste. Cook this paste over low heat, stirring constantly until it turns a golden color. This paste is called "koji." Let the koji paste cool. This fermentation process can take several months to a year, depending on the desired flavor and strength of the soy sauce. During this time, stir the mixture occasionally and monitor the taste. The longer you ferment it, the stronger and richer the flavor will become. Strain and Store: Once the desired flavor is achieved, strain the liquid through a fine mesh strainer to remove solids. This liquid is your homemade light soy sauce. Bottle and Store: Transfer the strained soy sauce into clean, airtight bottles or containers for storage.

@@ken_kaneki7939 you're not gonna put tons in your food it's mostly a teaspoon for 2 meals of noodles to color it. And you can adjust the recipe to put less sugar but you need sugar for this.
