Homemade hash browns too often end up a soggy mess rather than the crispy, golden shredded potatoes they should be. Chef and food writer Matt Degen shows how to easily make diner-style hash browns right at home.

Gadget - definitely a corn cutter. It works best on lightly blanched corn. (In my opinion.) If there is pulp left in the kernels ends on the cob you might want to take the back side of a butter knife and push them out into a bowl. This is an old fashioned trick. In heirloom sweet corn varieties like bantam, this is where the best flavor is. cut corn + corn pulp + butter = simple creamed corn.

Thanks for the interesting video. That’s an excellent secondary use for a potato ricer! This week’s mystery device looks like a corn stripper.

It is for stripping corn off of the cob. I shred my potatoes with a salad master grater.

Fantastic. I’ve heard the lore of Salad Master cookware, and it’s constantly on my radar while thrifting. I’m eager to find and try it someday.

Ahhh, good eye! I hadn’t been to Harbor House in years, but the need for B-roll was as good an excuse as any to re-visit. It still happily filled me up 😀 Great little spot.

What do you mean I don't want to use waxy potatoes for mashing? I admit red skin potatoes never mash perfectly, and are lump, but that taste is FANTASTIC. Taste is the main reason I make mashed potatoes. Would I feed them to guests? ...probably not. Yukon gold that is semi waxy also makes tasty mashed potatoes. I wonder why starchy potatoes have the better texture, while many waxy potatoes have a more richer and very slightly sweat taste...hmmm.

My lucky potatoes get shredded with my family-hand-me-down old 1950s mouli - the one with the whale tail and rotary discs. Bet you have one of those.

Oh those are lucky spuds indeed! I do not have a mouli, but guess what is now on my thrift-shop radar, lol!

So that's what I have been doing wrong with my homemade has browns, too much loose starch and too much water. Thanks!
