Homemade Lemon Powder

We dehydrated and freeze dried lemons and then made powder three ways. After we powdered it in the blender, we placed the powder back in the dehydrator to drive off the last of the moisture. The result was perfect lemon powder that has many uses and is shelf stable for months.
Note: Since lemonade is made from only the juice of lemons, this powder would not work well for that considering it contains both the pith and the peel. We will do another video on how to make powder for making lemonade.

The one with more bitterness you can use to make bitterlemon, it's delicious!!! I've never dried lemons. When I use fresh lemon juice, I always cook the peels afterwards to make bitterlemon (when you ferment the drink for one day you get also the gas inside). The peels after cooking aren't bitter anymore so you can make candies and bath them in chocolate, a very delicious sweet. Maybe the cooked peels can be dried and powdered too (when you can resist not to eat them) They are delicious and they still have a lot of flavor.

Hi Pam.Thank you for the video! I think that for the last batch (the one without the zests), if after zesting them you raw peel and divide them like we do with grapefruits, you'll end up with raw lemon quarters that you could freeze dry. No more bitterness outcome. I know, it's a little more work, but now they sell very good serrated paring knives and it makes that kind of job very easy. I don't know how that will impact the lemony flavor but who knows? Maybe you'll end up with a good raw lemonade base. All the best.

One particular video you did was whether we could use the insta pot for canning. The thoroughness for which you put forth was excellent. I was amazed that you were able to use a special thermometer (which you were able to use from one of the University’s), that actually fit in the pot with the jars and was able to record how hot it got. Yes, I was amazed how far you took the research, for that I thank you. I love this lemon video. ♥️ Your lemon taste test demo was priceless🤣🤣🤣🤣 rolling on the floor.

Miss Pam, I’m delighted that you covered this topic. I’ve been thinking about doing the same thing myself, but was wondering about the nuances. Thank you for being willing to do the experimentation and to share it with us, so we’ve already got a head start on our dehydration of lemons. That plastic bag idea is sheer genius. Big thank you to whoever sent that in! Serious game changer there, when all we wanna do is get something done and packaged up properly as quickly as possible, Without having to stop and deal with food getting flipped up into the lid. By way of giving back, and especially for people who want to save on the energy, When it comes to drying lemon peels, there is an easy trick that saves a lot of energy. When you peel the lemon, if you hold your peeler and just rotate the lemon with the other hand, you can get all the peel off in one continuous strip. Then, you can just hang it over a rack in the kitchen, and when you come back a few hours later, it’s dry. Or at least that’s how it works in my kitchen, and I live in a cold and humid location just slightly above sea level. Mind you, it leaves the peels more golden than sunshiny yellow, but it doesn’t seem to affect the flavor. I use them for tea, and they taste as nice when they’re dried that way as they are when they’re fresh for that use. Mind you, your powdering idea looks divine; as soon as I’ve got a new batch of anything to do with lemons done tomorrow, it’s all going in the blender! I’ve got half a bag of Costco lemons there, and they may have to go in the dehydrator tomorrow after seeing this today. Thank you so much! :-)

Place your trays in your refrigerator or freezer, if you have the space, to cool the items for freeze drying for a little while. It helps with the temperature already down before placing in the freeze dryer

Yes, we do that. We have some trays in the regular freezer right now waiting to go in the freeze dryer.

I live in Canada and where I am lemons are very expensive most of the year. So I rarely by them. However, about once a year they go on sale. This will be great to store them. Thank you.

Hi there...I have an organic thin skinned lemon tree in my garden. I planted a small tree and it has never has any pesticides sprayed on it. I peeled the skin off quite thick with the pith...removed pips and put the lemon through my juicer with peeled fresh garlic and fresh ginger. I then cut up the skins with a pair of scissors and processed the skins in my Food Processor.. The juice of the lemon..ginger and garlic is in a bottle from which I take a few teaspoons a day...can dilute in water with some honey or add honey to the spoon of juice.... I added the fiber/pulp from the juicer which was lemon..ginger and garlic and added it to the skin mixture in my Food Processor. From this mixture I take a few spoonful in a cup and add boiling water to it...when it has cooled off a bit I strain it and add honey which disguises the bitter taste of the pith ..Makes a good and healthy Hot Toddy... I read that the pith is healthier than the lemon juice so I incorporate it.. All that is left are the pips which can be planted. I will dry some skins on a baking sheet in the sun as I only have a Sun Oven not a Dehydrator and want to make Lemon Powder. I also read how adding sea salt or Himalayan Pink Salt to the lemon powder preserves the powder. Regards from Sunny South Africa🌞

Loving you sampling different ways of dry lemons🍋 and for lemonade which I do from my lemon and lime 🌳trees. I don't have a dehydrator thinking of buying one, whats your best one to purchase. Thank you so much for all the time you take doing these examples.🥰 also I've read and saw a video of a dr saying how these fruits are all medicinal for us seed pit and all not to toss away eat it all.

After zesting or peeling the outside of the lemon; could you have peeled the pith off the rest of the lemon that you sliced, so they would not be bitter?
@tdewtx

Recently I dehydrated lemon, lime, and grapefruit and powdered them..... Grapefruit smells heavenly/ All three slip into cooking and dressings with ease. I did the whole fruit in slices and it really isn't bitter.

You can put the lemon curd and Greek yogurt in piping bags or use parchment paper to make one and fill the parfait glasses so there are not any smudges.
