You may know this dessert as Malva pudding but in our house, it is known as the "Jan Ellis" pudding. Two very similar desserts. This dessert is named after the iconic Springbok Rugby player. It has a spongy texture and has a deeply caramelized flavor. A rich sweet, and creamy sauce is poured over while the dessert is still hot. A South African favorite. Baie lekker!
Recipe
All the ingredients must be at room temperature for the best results
The Sponge cake
∙ 1 cup full cream milk(250g)
∙ 2¼ cup Self raising flour(350g)
∙ 1 teaspoon baking powder
∙ 1 teaspoon Bicarbonate of soda
∙ ¾ cup brown sugar(150g)
∙ 3 eggs
∙ 3 tablespoons Apricot jam
∙ 3 tablespoons butter
∙ pinch of salt
The creamy Butter Sauce
∙ 1 cup water
∙ 1 cup Fresh cream
∙ 1 cup butter
∙ 1 cup sugar
∙ 1 tablespoon Vanilla
