Ingredients:
2 kg raw mangoes, washed, dried, and cut into small cubes
2 tbsp salt
2 tbsp fenugreek seeds (methidana)
2 tbsp fennel seeds (saunf)
1 tbsp red chili powder
1 tbsp turmeric powder
1 tbsp mustard seeds (Rye Dana)
1 tsp nigella seeds (Kalonji)
1 tbsp cumin seeds (Zeera)
1 tbsp coriander seeds (Sabut Dhaniya)
Mustard oil or any neutral cooking oil
Directions:
In a large bowl, add the raw mango cubes and all the spices, including salt, fenugreek seeds, fennel seeds, red chili powder, turmeric powder, mustard seeds, nigella seeds, cumin seeds, and coriander seeds. Mix well until all the mango pieces are coated with the spices.
Cover the bowl with a lid or cling film and keep it on the counter top overnight.
The next day, mix the mango pickle thoroughly once and keep it in sunlight.
Repeat this process for the next two days, mixing and keeping the pickle in sunlight.
On the fourth day, drain the excess water from the raw mangoes and put them in a clean, empty jar.
Fill the jar with the mango pickle and pour mustard oil or any neutral cooking oil on top until all the mango pieces are submerged in the oil.
Let the mango pickle sit in the oil for 10 to 15 days, allowing the flavors to blend together and mature.
