I love duck too, its expensive but a tasty meat, its one of my fav. I'm also a big fan of Justine, such a nice person and I love her down to earth cooking, no fancy tiny dishes that you would need 20 of them to fill you up.
Great recipe, I had not thought of cooking veg in such a way in duck fat, I'm sure they would be super tasty like that, all you are missing is a good pile of basmati rice.
I very much recommend it, and to make it as easy as possible, I very much recommend the LovaDuck premarinated duck breasts with duck pancakes kit, I ditch the pancakes though they are nice and instead have it with rice, takes only 4 minutes in the microwave, let it rest while the rice cooks, also in the microwave for about 15 mins. I add a few extra bits to the rice, such as the cooking juices and accompanying hoi sin sauce and pineapple, spinach and anything else you would like to add such as blanched broccoli.
