Albinița or Honeybee cake (Dulcineea) has 4 sheets of shortcrust pastry with honey, 2 layers of semolina cream with milk and butter, plus a thin layer of sour jam (rosehip, raspberry etc). It is by far the best Honeybee Cake recipe, being slightly modified from the one on the blog! It is one of the traditional cake recipes from the olden days, which came from Russia, and is known both by Romanians and Hungarian neighbors. Mézes krémes is their name (honey cream) and has a chocolate glaze. The tender sheets with butter and honey can be baked a month in advance, they keep very well in the pantry, wrapped in baking paper. Also, the assembled Albinita or Honeybee Cake (filled with buttercream and jam) needs at least 48 hours of resting and softening, before being portioned and served.
