Pescatarians eat seafood including fish as well as everything vegetarians also eat. Vegetarians don't eat seafood, but do drink milk and eat eggs and cheeses. Vegans consume absolutely no products made from animals at all.

I think it depends on the person, but I know that there's a name for vegetarians who still eat fish or seafood : Pescatarian.

And I'd ask for the manager because your ass is either too incompetent to understand what vegetarian is after it being explained to you, multiple times, or you're purposely being a dickwad to customers for no reason and deserve to be fired. If the restaurant has no vegetarian options then just say so at the start rather than continue to offer the customer the ONE thing they say they don't want, over and over again.
