I really appreciate this video and all the content on your channel. I do have a dream of starting my own small brewery eventually. Been working on getting myself better educated and this is great. Some things to consider. if you want to package say 5 BBL of finished product you will need a 7 BBL system and 10 BBL fermenters. Have a cold room with Bright/serving tanks, kegging is a pain and so is having to move them around. Don't try to have too many beers on tap, have 4-5 regular beers and no more than 5 that you rotate seasonally.

Great video! It’s been about a decade since I’ve brewed a commercial batch and just partnered with a guy that will hopefully help me open my own place in the next 12-24 months. I’m the meantime I’m going to start brewing on his old 2 barrel system on his license until I get to that point and have been really enjoying your channel

Just discovered this channel and I must say its a huge amount of great info you guys have built! I reciently upgrated my brewhouse from 5 gallon carboys to a couple of 200L unitanks, is there any video in particular you would recomend me to get the hang of this new step? Why am I not surprised that when I searched for multi-bbl brewing videos you guys were at the top of the list? Having only done 5-6 gal brews over the past two years, I'm unexpectedly going to have the opportunity to run some brews on a 5-7bbl system in the near future. I've got a lot of learning to do so I don't make a fool of myself. (and don't waste other people's money on bad brews) I'd really appreciate more videos on moving from small-batch home brewing to larger, more ambitious brews. For example, I'd like to know the best way to scale up from the small batch recipes that have been most successful for me to the new system. I know that grains and water volumes are pretty straight forward, but I have heard that hop-scaling is not so linear. (?) Thanks, Logan! (Wherever you are!)

Always good stuff from you guys! I am interested in the requirements for dumping... dumping the grub from the fermenters, to when your cleaning. Is there a process where you have to dilute to a certain PH or what’s the process? Thanks again!

Awesome video! I like how you explained the different pieces of equipment and what they're used for. I've home brewed for a few years, and worked at a major soft drink company doing everything from picker to machine operator to maintenance tech. Im starting to see it as schooling, giving me ideas for things to include and avoid if I were to start a brewery. Any suggestions on how to get loans for the site and equipment? Also just wondering, why can't you use the gylcol system to chill wort rather then a plate chiller?

Awesome video bro. I would really appreciate you to tell me if you filter your beer, or how do you do to not to have yeast residues in the bottles after carbonation? And how long does it take to ferment and mature your beer before carbonation? Thank u

I'm in talks going from homebrewing to being a brewer on a 7bbl system; actually meeting with some owners next week. I need to get familiar with the system of course and there will absouletly be a learning curve. I've done some collaborations with breweries on 3bbl and 2bbl systems so I'm pretty familiar with the process. When it comes to cleaning the system, about how long would you say your full cleaning regiment takes after a brewday or prior to one? Amazing video by the way, awesome information.

Liking that Chop & Brew sticker on the cooler door! Looks like a nice little brewery, but looks like it can be a little tight for workflow. This is, however, coming from a cellarhand at a brewery with a 2 BBL brewhouse and seven 2 BBL fermentors and a brite tank packed into a rather small raised brew deck area, so it's obviously the first thing I notice at a brewery.

Yea it's definitely not our ideal set-up, but since it was zero initial cost for us to jump into there's not much we can do to complain :p

Working on starting a cidery/meadery in 2024 so would definitely appreciate any insight you can provide. I've got the licensing and tax rates down (cider is unnecessarily complicated for taxing) Could use advice on where to establish the brewery, what equipment besides the 10bbl fermenters and pumps I may need, etc.

It's pretty rare - we are the only one of this style in Washington and there are very few like us in the US.

Curious why you are so diligent about cleanliness of the brew house. I would assume the wort is sterile from boiling. So as long as it is clean enough to not give off bad flavor... is it necessary? I am starting a brewery.

Nice brewhouse I'm quite jealous. I'm a small scale 1bbl brewery that's on hold due to COVID lockdown :( Question for you: separate FV's and brite tanks - with hindsight, would you have gone for unitanks? I'm looking to scale up and start a brewpub, unitank seems a logical solution to carbonate, serve and package from.

I want to start a nano brewery myself, and want to know what the best equipment size to start with is. I have my recipes dialed in, with the exception of increasing the batch size of the recipe. I am just not sure how to go about getting nano brewery equipment.

After being a commercial brewer for the past 8 months I can tell you that if you expect to get 7 BBLs of a packaged product then you need a 10 BBL system. I brew on a 5 BBL system and the owner doesn't understand all the losses involved. depending on the beer we get between 3.5 to 4.5 BBLs.

How do I know what commercial beers use GOOD water (either reverse osmosis or spring water)? This seems to be a secret in the beer industry. I love drinking beer but am trying to avoid tap water

Yes usually they are smaller due to different head-space and shape requirements.

That's really dependent on how much you intend to sell but 1 BBL per 10 seats you expect to fill during a busy time is a good average and should give you room for limited distro.

So, you are sharing the Hot Liquor Tank, Mash Tun and Boiler and your partners just farm their brewing out to their own brite tanks and Fermenters? I have considered doing a contract only brewing facility, rather than going out an getting the taprooms and all that set up initially. Do you contract out coldroom storage also? Great video...very interesting stuff.

Yep - fermenter and brite are to individual breweries but the brewhouse is shared :)

Focus on the neighborhood you're in first. Win in your own backyard before branching out and you'll skip over a lot of the growing pains some other breweries go through.

@@GenusBrewing I do a similar thing. I can only boil 15ltrs so the water through the chiller starts the next 10lltrs to make my 25ltrs. :))

Even better than I thought it would be! I would not have guessed you guys shared a central brew house. That seems like a fantastic strategy to mitigate some of the huge expenses of equipment acquisition, and probably allows you to maximize revenue on your store front square footage. Are all of your commercial beers produced there, or just the ones you need high production to keep up with demand? In previous videos, it looked like you have quite a collection of equipment at your store. Fantastic video. I was expecting it to be fascinating. It exceeded that!
