@M LA Tuna of that size costs several thousand dollars on the inexpensive end. They have been known to sell for a hundred thousand or more. It takes a long time to get the cuts right to maximize yield and minimize damage.

When he said his parents "Let [him] help" in their restaurant, I understood his love for cooking. He didn't see it as being forced to help out, but a chance to learn. It's that thirst for knowledge that makes a true master-anything.

I'm a fishmonger in New England and monkfish is abundant and treated as a low grade fish that customers don't typically buy...it's so delicious and underrated

He's such a soft person with a kind soul, it's almost healing how comforting he is just talking about what he loves. So I'd feel full walking out of his restaurant. Hope it survives this covid economic disaster tho.

Although it looks delicious I rather not buy bluefin tuna since it's been in major population decline from overfishing and illegal fishing. Most of the demand comes from high end sushi restaurants.

@@Pammellam I don't know of any fully captive farmed bluefin tuna, that's like trying to farm sharks. Doesn't seem feasible. The only tuna 'farming' I know of is where people take wild juveniles and raise them. This is not farming,

using different rice vinegar for different cuts of meat is actually pretty smart and not something I even would have thought of. Usually you just season the rice and don't even think about any sort of variation. It's just rice vinegar. But that takes it to a new level. I'm glad I learned that.

I got to work with sushi grade ahi tuna today. It made me so happy. I had a little leftover and got to put it up for staff. One of those people was a Japanese lady. And she thanked me profusely and it made me so happy.

Just out of sincere interest, fresh tuna can be refrigerated for 2 days. Do they sell the entire fish in two days? If so, it says he gets a whole blue fin every two weeks, 12 days seems a long time without fresh tuna for such a restaurant. Or do they have an alternative way of storing the fish, 'cause I would be very interested to know what that metod is.

themrmaiorca Fresh tuna can be frozen for longer; and through a special way of killing the fish (just like the Muslims and how they do halal) they let the blood out to preserve freshness

Yeah, fresh tuna from the super market. This is coming straight from the fresh fish market and provided it's kept right, cold dry etc, will last quite a while, possibly up to 10 or eleven days

yes they are...some countries have more regulations but because bluefin tuna migrates throughout international waters, the countries without regulations are just taking more and more of them :(

Most bluefin tuna are farmed now. Japan and S Korea have fish farms for them to make them sustainable. America is working on it as well. Most sushi restaurants only order their bluefin tuna from these sources.

I appreciate the wearing of gloves during fish prep. The acid in human sweat from the palms destabilizes the fats in the fish, and if I'm paying that much for sushi it better be done right.
