You can just install random tools onto any distro. Kali comes with several pre installed packages that allows the tools on it to work properly. Unless you’re experienced and know what you need and are willing to go around and turn whatever Linux into a Pentesting distro, go for it.

Even if you found the correct one they often are sold with the wrong chipsets now. Use a Panada Wireless one, they come with the correct chipsets for Packet Injection along with monitor mode.

VPN will make it harder to track you and your location but if you're using an open wi-fi network regardless of encryption you're still sending out the data and anyone can see that if you're hacking your database or network.

Wireshark can capture data once you have connected to a network. I haven't tried the monitor mode in wireshark and checked if its there.

This means that you're vulnerable to any activity performed on that local network.
