There is also the Invincishroom in Superstar Saga (which just puts mario in a coma) and in addition to the other mario RPG mushrooms that people have mentioned (Vacuum Shroom, Life Shroom, Volt Shroom, etc), there is also the "mushroom that turns you into a mushroom" that you can buy in Monstro Town in Super Mario RPG.
Actually, the one that poisons Mario is just a type of poison mushroom, the real Invincishroom can be seen in the remake Superstar Saga in the side Mode Bowser‘s Minions. And as it turns out, it’s the same shroom that appears in Captain Toad: Treasure tracker if you lose too much in a level which grants you invincibility for the rest of the level.
Yeah, what you're probably thinking of is the white tanuki leaf from 3DL and 3DW, which is the same as a regular tanuki leaf except it also makes you invincible, like a permanent super star.
In New super mario bros.2 you missed the goldcoin mushroom, In the RPG games you missed: - the dried mushroom - the volt mushroom - the life mushroom - the drop mushroom
I understand not eating all of the dishes in the Paper Mario games, but those games have mushrooms that are distinctly not just dishes. That I can think of, those would be the Dried Shroom, Life Shroom, Volt Shroom, Poison Mushroom (the Paper Mario version is green, not purple, so by the visually-distinct rules should count), and the Slow Shroom.
In Mario Maker 1, there is also the re-entered Big Mushroom that acts the same as the Big Mushroom normally, but it makes every enemy have Mario mustache and it is colored like the original Super Mushroom.

I think you missed 3 mushrooms: - Golden Mushroom (Captain Toad): Gives 50 coins - P-Acorn (New Super Mario Bros U): Similar to Super Acorn - Volt Shroom (Paper Mario): Makes Mario electric for a few turns (You could also count Super shrooms, Ultra shrooms, and Life shrooms as separate ones from that game too)
While this one is pretty stupid in super mario RPG legend of the seven stars after completing the booster parts you can get a wilt shroom, but it would take a couple hours to get.

I wouldn't count this as it is quite literally impossible to get, but in the files of Bowser's Fury there is an unused mushroom called the "Giga Mushroom" (I think) which when collected instantly brings you to the size you would be in the Fury fights
Being a staple in many of the games in the series, I think finding and meeting Cid in all of the Final Fantasy games that he exists would be cool. A super long journey but would be a wild speedrun.

There are the tiers of healing mushrooms plus the dried mushrooom and life shroom which has a different design to a 1up mushroom in the paper mario classic series. Then there's the shiny mushroom from sticker star onwards. As they do different things and have different designs I'd say they count the same way you allowed Super Mushroom and Dash Mushrooms to count as different mushrooms this time around.

Super Paper Mario has a blue mushroom that is twice as effective as a normal mushroom, and a green one that is 5 times more effective than a normal mushroom, and while it looks like a 1-UP mushroom, serves the same purpose as a normal mushroom, so is different.
The Battle Game in SMB3 (not the NES version) has a different Reverse Shroom that either swaps the players' positions or, if one is big and the other is small, exchanges the players' power-up states. Paper Mario has some non-dish mushrooms such as Dried Shroom, Super Shroom and Ultra Shroom.

There are several mushrooms unique to the Paper Mario games, not even counting those dishes you alluded to. The Volt Shroom, Slow Shroom, and Life Shroom stand out as having functionality unique to the game, there's also the Super Shroom and Ultra Shroom which are upgraded healing items on top of the basic Mushroom being a healing item in those games.
If you could the Mario&Luigi Games (which is awesome since many forgot about those Games) then there are a few more. Like the 1-UP DX, Super, Ultra, Max and Golden. And then of course there is Paper Mario with Dried, Volt, Honey, Jelly, Slow and Maple. As well as some cooked stuff.

I believe in Mario VS Donkey Kong on GBA, the bonus 1up mini games can provide you with multiple 1up mushrooms variations with different colors from the original green one.
Idk if this counts, but in Mario VS Donkey Kong on the GBA, theres a minigame after every level (i think they only activate if u get every present but idk). The big prize in the minigames is a blue 3-up Mushroom
And in the Mario and Luigi series in the first game and we can’t find the Vince ability mushroom, but that’s in the story pot purposes, so I don’t know if they would counter not

There’s actually an invincible shroom/invincishroom Mario can eat. It’s a key item in Mario and Luigi superstar saga which you get for beating a minigame in little Fungitown.
Despite being in paper Mario and on the Wii U, in paper Mario color splash, in green energy plant, when you enter the tv, there is a one up mushroom, except it gives you paint instead of an extra life.
As someone who has actually played the mario Kart arcade titels, the time will vary as each character only gets 3 items per game, and all mushrooms are in the "special" item roulette, so the minimum is 3 with a max of approximately 30
Since I can't go 5 mins without bringing them up, I'd say there are a few in at least Paper Mario, Thousand Year Door, and Super that should count. In PM: Super Shroom, Ultra Shroom, Volt Shroom, Dried Shroom, and Life Shroom. In TTYD: Slow Shroom. In Super: Ghost Shroom (although you get it and use it, not eat it), and Slimy Shroom. There are probably more in the other PM games, but I don't know much about those. And these are all items that can be obtained without visiting a chef.

Specifically, there are Dried Shrooms, Volt Shrooms, Life Shrooms, Zombie Shrooms, Ghoul Shrooms, Super Shrooms, and Ultra Shrooms. All of these types of mushrooms can be found out in the wild in question blocks.
Im actually not okay with acorn being on the list. Its VERY VERY similar to a mushroom and I get it, its highly stylized to look like one but it even grows on trees, you see it in that one cutscene in the game. In Paper Mario Alone, there's Super Shroom, Volt Shroom, Life Shroom, Ultra Shroom, Dried Shroom. And then there's Super Paper Mario, which at bare minimum has the Slimy Shroom. But you could also make an argument for the 3 Shroom Shakes it has as well.
Looking through the wiki, there are actually a number of mushrooms you missed: - 2 UP, 3 UP, and 5 UP from the Mario vs Donkey Kong series. - ? Kinoko, which appears in the Super Mario All-Stars version of the Super Mario Bros. 3 version of Mario Bros versus mode. - Invincishroom, a plot item in Mario & Luigi: Superstar Saga - Life Shroom, which appears to be it's own thing that just so happens to be able to be cooked. There also seems to be a bunch of mushrooms from the Paper Mario/Mario RPG series that aren't just cooked versions of exists mushrooms, like the wiltshroom, slow shroom, dried shroom - Time Kinoko, found in Mario & Wario

I think in your prior video you mentioned that you wouldn't count Paper Mario, but there are a few mushrooms there. Super Shroom, Ultra Shroom, Honey Shroom, Honey Super, Honey Ultra, Maple Shroom, Maple Super, Maple Ultra, and Jelly Shroom, Jelly Super, and Jelly Ultra. It could be argued that some of the other recipes that involve mushrooms should also be counted, and the Shroom Shake from Super Paper Mario is known in Japan as the Canned Mushroom, so I think it should count too. Great concept for a video though!
Double checked and the mario wiki considers the gold mushroom from new soup 2/cpt. Toad to he separate from gold dash shroom, and a gold mushroom from the party series. So that is one you can add to the list
I can name a couple mushrooms off the top of my head that weren't featured. The Mystery Mushroom from Super Mario Maker, and the Dried Shrooms from Super Mario RPG and the Paper Mario series (They have the same name, but different designs.)
There is a mushroom in super paper mario that automatically revives you with 5 when you die, poison mushroom enemies you sadly cannot eat, but there is a poison mushroom item (that I think you obtain when defeating the mushroom enemy) that debuffs/poisons you.
I don't know if their available in story mode but since we made rules for mario maker 2, even though you can get those mushrooms sooner from the level editor, it would have been cool if they were collected from the story levels to add to the challenge of actually needing to progress and route the levels
The paper Mario does have a few mushrooms that aren’t just recipes like the life shroom and the ultra shroom (maybe the blue super shroom but it’s name is almost the same as the super mushroom from the main games)
There is the invinvibility version of the super acorn,the mario galaxy mushroom thatt gives you +3 temporary hp,the shiny and rainbow version of the mushroom from sticker star,and a powerws up version of the 1-up one,not sure where,but pretty sure somewhere in the m&l series there are a shrinking and an enlarging mushroom,there is the sporeshroom from partners in time,and there is another mushroom mario can never eat there,princess shroob. Than as one of the final attacks you can find a giga mushroom in paper jam,the mushroom mario eats in superstar saga that makes him sick is another unique one,and then there are a good number of ones in super paper mario. There is the volta shroom,a mushroom that heals one hp,and i am pretty sure there is at least another one there. And they are not recipes.
You missed the refreshroom on Mario and luigi partners in time, also the mushrooms you use in the game series have different names like the max shroom, etc but idk if they count
Galaxy has the Bee Mushroom that turns you into a bee and the Boo Mushroom that turns you into a ghost. How about the Baa Mushroom that turns you into a big, bouncy, fluffy sheep? And then you can combine them to make the BeeBooBaa mushroom that turns Mario into a voluptuous insect!
