Smoke in the Smoker - Wrap and Cook in an Oven, Add Sauce and/or Glaze in the oven too. I love my PECOS. Three Years plus Old now and still going strong - Still a Baby. Best Outdoor Cooking Investment I ever made.
Good work on the video and good job on being efficient using the oven. I was hoping someone else used that method besides my family since all we have is a kettle grill and temp control is pretty random on it. I look forward to your next video.
Thanks for watching! Yes, I think with Pork Butt it's the best way to go. Plus when it's in the oven, I can go to sleep! I'm going to do a Brisket at some point, I'll be sure to document that process for sure!

Hey. I cheat also with my Weber Smoker. There is no need to keep those butts on the smoker any longer than 5 or 6 hours. You got a great deal on that Pecos and great mods. Good temperature control

Eric, Hope your day is going well. Found me a welder to cut me some tuning plates, he said for the material is $258. I know nothing about the cost of 1/4 metal, does this sound right? That's more than I paid for my Pecos. Help needed Thanks
Kevin Holt , holy crap that’s way way way to high! You should go to Home Depot or Lowe’s. Buy bar stock. 1/4 by 2, 4, or whatever you can find. Or like I said 1/8” will work too.
Kevin Holt Also, if you can’t find a tuning plate there, check out Horizon Smokers. They can custom make one for you. You will have to get them some measurements though. Probably still way cheaper than what you were originally quoted.
