If you package it in quart size vac bags, you can use a rolling pin to flatten it out. The package is about 1/2" thick when done (1 lb pkg). Stacks flat in the freezer, and thaws quickly. If you throw it in a sink of water, you can thaw a 1 lb package in about 5 min.

That is a fantastic tip! Even if you do them like I show in the video, making a couple like you suggested is a great way to have it available fast for night you get home late or spur of the moment meals. Thanks for sharing!

Been using the LEM bagger system since your first video showing it. Love it. Still running my original food saver Got excited this week when I thought it quit me ( excuse to buy the vacmaster) but it was just unplugged. I don’t go through 1/5 of the processing you do so I’m sure it has a few more bags of life left in it. Great system.

I've had my lem grinder for 12 years or so, no problems with it and we have ground literally tons of meat with it. great products. the taper is a pain in the but to use threw it away and went to the hog ring pliers and rings that lem sells for the bags. so much easier to use.

The tape tool takes a little getting used to but does work great once you figure how to use it without constantly flipping the tape out. But I am going ro try the ring and pliers when I run out of tape. Glad it works great for you.

I have the #8 big BITE also. I assemble the head and freeze it for about 30 minutes before grinding. Keeps the meat and grinder very cool. Keep up the great vids. I'm a Michigander myself and enjoy watching. Also harbor freight has a momentary foot pedal for around$15-20 works awesome with this grinder

If you ever wanna try it, when my wife and I vaccum seal our burger, we smash the meat flat to take up the entire bag and it makes a half inch thick square 1 lb patty. They stack great in our totes for the freezer and defrost very fast for quick week night stuff because theyre so thin. We get easily 3 or 4x the amount of stuff in the deep freezer compared to how we used to do it. That burger bag deal is pretty slick too!

@@SamkoTradBow plus you use less bag material I've noticed. Instead of needing more bag to stretch around a big glob of meat and then having inches of unused bag at the top, we use the 8 inch wide rolls and the bags end up only being around 5 inches long or so for the 1 pound packs

You could also save some of the fat from the deer. This way you don’t have to buy it. Also when you are grinding meat make sure you keep the grinder parts cold. We would often freeze the parts to get a good chill on them. We found it helped the meat (especially the fat) from getting too hot while grinding. If you get a muddy color when grinding. That is the reason. You should have clear separate colors. You want to be able to see the meat chunks and the fat chunks.

Great tips. We dont like the deer fat taste so we prefer beef or pork fat. With the lem we dont have to cool the mest like we did with other grinders. But with out other grinders it was mandatory as was making sure to get all silver skin off.

The butcher at my local grocery store just gives me beef fat for free so I just grind it out in a pile, chill it and mix accordingly with my venison grind which is typically 80/20 mix, it actually tastes like beef burger patties, I love them by themselves with just salt, pepper and garlic powder medium rare.

Great video! I like getting extra fat from the butcher then grind that in, Whole Foods is a great place to ask for trimmings to grind in.

Yep thata what we did for years. Just got the fat from the butcher. We like the ground beef method as it turns 30 pounds of venison in 40 pounds and you can not wven taste the beef but gives enough fat to hold burgers together etc. But the fat from the butcher is a fantastic method!

@@MichaelWilliams-to3cj yep most people add some kind of fat, beef or pork to make it hold together better as it's so lean. The only benefit to how I do it is you get more meat out of the deal. Even though its beef. But if you want 100% venison just add fat from butcher.

Congrats on the deer! I run about 80% venison and 20% beef. 70% and 30% on rut deer.

The only thing that I do differently is I freeze all of my grinder components prior to each use. Being that the motor and all other moving parts create heat and breakdown fat, freezing the internal parts before the grind seems to help. Other than that.. using ground beef is fine, but I use pork (either way, no biggie.. its all personal preference).

Freezing the parts is a great idea. I see the new cabela grinders come with freeze packs for that purpose. I have never had a problem with the lem heating up too bad to need to freeze anything. But it sure would not hurt anything to do that.

I did not. I never do with the lem. Had to pre freeze the meat with other grinders but not with thos one.

Wishing you great luck and adventure when you hunt this year. Usually burger is made from all the left over meat after you cut the steaks, roasts, and other prime cuts. Then everything else gets grinder for burger. Check out the bearded butcher on youtube. He has some excellent deer processing tutorials.

I just use fatback or beef tallow while grinding deer burger. But there's more than one way to skin a cat.

When I grind burger I add regular beef ground round to it to hold it together. I do about 2 pounds of beef to 10 pounds of venison. Like in this video. Thats all I do.

Jason, so you always do 2 grinds even if your not adding beef or fat? Do the grinders usually come with both size plates needed?

I always do 2 grinds. It's easier on the grinder I think and it's just habit as I'm always adding beef to it. Don't know If all grinders come with 2 plates. The lem did and I bought an extra cutter for 10 bucks from lem so the cutter and plate are in 2 sets and always have the same cutter working with the same plate. So wear is always even and the same per set.

I do about 2 pounds of burger for every 8 pounds of venison or a 20% ratio. But its doesn't need to be exact. Can be 10, 20, 30% whatever you want.

Self employed and bust my butt all spring summer and fall running 3 businesses so that I can take the time off in nov, dec,, jan and feb. This was a goal of mine when I was in my early 30s and I worked very hard with many 80 hour work weeks to build these businesses and get away from a normal job to all us to live this way.

How much time do you spend removing silverskin? That's the part that really drags the process out and makes it tedious for me.

Yep silver skin sucks! But honestly since that melts away the only real reason to get rid of it is because it clogs the grinder. With this lem nothing clogs or stops it. So now we just remove the silver skin from back straps and the main silver skin off the hind quarters and the done. Probably mins on silver skin.

A friend of mine gave me deer meat to try. He butchered it himself. Everything looks very clean but I am petrified to eat it... He gave us ground deer meat. Is it hard to accidentally spill a lymph node into the grinder? I'm worried about CWD, but the area he hunted doesn't technically have it, it is near an area where cases have been reported... I don't want to eat a deer burger and then find out 10 years from now that I'm going to die from vCJD...

I dont think you have anything to worry about. Especially if you cook it above medium temp. We live on venison and often eat steaks medium rare and we are not far from a cwd zone and the TB zone. My honest opion is that any venison is atleast 10 times safer than the risk you take with store bought meat. I have never in my life heard of anyone getting sick in any way from venison. But store bought meat always has recalls, etc.

why would you add such a horrible type of ground meat to your venison? I mean if you're going to add any meat, at least get some good grass fed stuff, not that toxic stuff. Look, yeah yeah yeah I wasn't invited to eat what you're making, I get it. But if you have the money to do everything I see, and to hunt out of state, why do you eat such HORRIBLE stuff? I'm asking for YOU, not for me.

I'm a firm believer that a little bit of bad stuff is good for the immune system. And it has alot of fat in it where as grass fed has less fat. The fat content helps hold the meet together. We have tried thos with the leaner meat and it doesn't really help. So for making burger you want the fatty stuff.

@@SamkoTradBow I'm not talking about the fat content. I'm talking about the hormones and chemicals in the processed (tubes) hamburger. That's the stuff that causes heart attacks and health issues, not fat or cholesterol, and a little bit does nothing but hurt. Its the inflammation all that added crap causes in our bodies that is the culprit, not the "fat and cholesterol" that we've been told is the problem. Its worth the effort (and price) to find some local well raised beef. I'm not a vegan health Ranger, as I live off the red meat we kill, but I've found a little adjustments in our diets go a LONG way. Not trying to preach, but I cringed when I saw you use that stuff for such a purpose.

@@tedskam good to know. When we buy beef we buy it by the half cow locally from our local farmer. But that has to be planned in advance and prepped. The store bought stuff is easy to grab quick for mixing like this. Will try harder to to stick with better beef next time and maybe even plan ahead and let local butcher know I will be needing some.
