Using the process as explained on the Tally Ho project, I transfer the lines from the lofting floor to the templates. Then, using the template, cut out the station and shape them to final dimension.
I watched this video again. I noticed that the edges of your stations are perpendicular to the other surface. Something that I read on metal shaping forums is that you should angle the edge. Either make the front or rear edge the desired profile and sand it back (or use a router) to the other edge. This makes the point of contact with your metal or profile gauge one small point and not the whole edge of the plywood thus throwing off the contour of the body. I hope I explained myself well enough.
That would be true(especially as some of the stations are 3/4" thick and some are 1/2") but this is not the finished buck, I'll keep explaining my process and the final buck will address this issue to be sure.
