Celebrating Appalachia recommended your recipe! I love pickles but have never tried for fear of mushiness. She said they were the best! I saved your video and will try it next summer!
I also follow Celebrating Appalachia. That's how I ended up here. I've made pickles before for my husband but they don't stay crunchy. Saving this for next summer so I can try again! Thanks for the video. Can I slice the pickles instead of leaving them whole and they still be crunchy?
New subscriber here. I have heard from Tipper and Matt Pressley that your pickle canning recipe is the absolute BEST! Thanks very much for taking the time to share your knowledge. I'm looking forward to watching all your videos I haven't seen.
First time pickling cucumbers and I’m going to use your recipe. I’m new to canning and preserving so everything is frightening until you just do it! Thanks for an easy, understandable recipe!
I’ll definitely make both once my cukes and tomatoes are ready! Now I have more to learn and enjoy. My favorites are bread & butter, sweet gherkins, then kosher dill. Not big on hamburger dill. Love salsa!
Love salt pickles! I use to walk about three miles to a mans house and visit and he always gave us a salt pickle to eat on the way home. Making memories will carry you a life time and bring great joy!
Tipper Pressley from Celebrating Appalachia sent me! I need to try your pickle recipe! I usually make slightly sweet/spicy refrigerator pickles that last ridiculously long in the fridge but my husband’s strictly a dill pickle guy and won’t touch them. 😂 (P.S. My favorite cukes are Japanese Longs from Baker Creek Heirloom Seeds.)
If you want to try another variety, try “Muncher”. It is a long, small seed, thin skin, straight growing cuke. This year I have had some irregular watering and got some weird shapes, but still tasty. I cannot seem to memorize my zone, but I live close to Tacoma Washington, so generally not on hot, but pretty dry summers. Muncher was the first variety I ever bought that actually look as pretty as store bought.
This was an excellent video and I plan to do this in the future. I love pickles. I also like the fact you said it works with tomato soup. Looking forward to your recipe on tomato soup. I have one that I love that I make in an Instant Pot and so now I need to see how you do it. Thank you again Justin...Roger from Metcalf, GA
Hey Justin! I just picked my first big batch of cucumbers today and am about to start making pickles using your method. Can you slice the cucumbers and can them? Or will they loose their crunch? Let me know what works best for you! Thank you!
Hey that is a something I can say they do for us in quarters. I just went and opened a pint of quarters from a year ago and they were still crunchy. Instead of Alum I put a clean grape leaf in the bottom and top of the jar. It works perfectly! Thank you
Made pickles for the first time this weekend using your recipe. All my lids sealed but I noticed yesterday my garlic cloves are turning a bluish green color. Is that normal?
Thank you for this. Just pulled my first cucumbers from my hydroponics - perfect size. Finished the recipe and they are sitting under the towel as I write this. So excited to try them in a couple of weeks :)
I can't wait to try your pickle recipe! Tonight, I watched Tipper Pressley make them and she advised going to your channel to see you make them and I am so glad I did. I can't wait to spend some time watching your RU-vid videos about the food ways and preservation.
"I never take that blossom end off, I just take my vegetable brush here and.. ( O.O ) ...take that blossom end off." Hahahahaa great video brother. Blossom ends are my favorite part and I even like a little stem on there. New subscriber here from your Northern neighbor Ohio.
I usually just guess. Im sure you could look up the comparison or maybe it would be on the label. We have had some big ones in the past and would put a half or a quarter of it. Thank You!
Hey Justin, how long do these Pickles need to sit on the shelf before they are fully dill potent and ready to eat? Some dill pickle recipes, say 2 weeks, other say 1 month, What's your opinion? I'm going to call these:" Metcalf Famous Dill Pickles" 😋Thks.
Thanks! Looking forward to trying these next year (I got the link from Tipper at Celebrating Appalachia 12.2022). She says they are the best ever! My grandmother used to make good pickles, but we don't have her recipe. I can't wait to try these...hopefully, they'll be Christmas gifts next year. (Jane in SC)
Justro this is so close to my heart to watch as I wash up morning dishes. A way I get most bang for my buck - hand pump brake bleeder and "food saver" jar sealer both wide and regular mouth size. You can air seal a jar of nuts, chocolate chips and get many uses out of the flat lids.
If I may, I would like to explain a quick method that is used a lot here and that I am satisfied with. You can try a handful of pickles and spread it out if you find it uninteresting. I put my pickles in the sink like you, I add about a tablespoon of coarse salt per pound or more if needed and I rub the cucumbers against each other for a few minutes. Then I rinse them well. The coarse salt removes all that is to be removed on the cucumber and it comes out clean and ready to put in jar. When the cucumbers are very small, I put them on a cloth, cover them and rub them through the cloth and rinse them... this method is really fast and thanks to the coarse salt the cucumber is really well cleaned
@@metcalfmills5679 Justin, please note that the smallest for you are the bigest for us. So you may need to use a little bit more salt for your big ones but you can start like i said and eyeball the mesurement of salt after...
I just heard about you and these pickles from Tipper @ Celebrating Appalachia. I am definitely going to make these next year. This year I did not have a successful cucumber harvest and had to purchase some from local Farmers Market to pickle a few and make relish. Blessings.
I am just getting the cucumbers. Once again this year I have a few cucumbers just starting to produce but not enough to pickle! And this year I tried planting many times. Oh well, try again next year. However, I am so grateful for local Farmers Markets! Blessings to you and your family. Mrs. Tipper and her family are such a blessing and have taught us all so much about Appalachia. And now we are seeing it from your view. Thank you.
@@kathleenm3282 I hope you can get them this year and maybe next year will be better! That is for sure, thank you!! Thank you and Blessings to you as well
I’ve been canning for about 38 years and have never seen or heard of canning pickles like this…..I will be doing this tomorrow!!!! I’m going to subscribe because you amaze me !!!
Justin, what if you have to put them in the refrigerator will they still work?😮 and also if you use dill weed that you grow how much do you use per pint or quart? Thanks
I always wash my pickle on rinse cycle in washing machine put a medium towel in with them come out soo squeeky clean I cant clean them that good in the sink with a brush... you dont water bath them?
I like how authentic you are and all the beautiful knowledge from your mama you are careful to share so well. I appreciated this video, I'v been learning. God Bless
My mom taught me a similar way. The only thing we do different is after filling the jars with the liquid and putting the lid back on tight is sitting them upside down on the towel. After about 10-15 minutes I turn them all back upright. I use that method on most stuff including jams and jellies as well as pickles and tomatoes. Your plants looked healthy and green so I don’t think the issue is powdery mildew. I had an old gardener tell me to prune my cucumber plants because the leaves being too thick will shade the cucumbers too much and make them white. I took him seriously and prune. Cucumber vines sorta grow suckers like tomatoes. I also grow them on a trellis so mine get plenty of sun. I have never seen that film but I wonder if that’s the white he was referring to? I will be following the comments to see what other folks think it is. Thanks for another great video!
I was sent over from Celebrating Appalachia! I also sent this over to my daughter. We are so excited to do this next year! I hope they will come out as good as you make them :)
I always cover my jars with a towel too, I've only ever seen one other person do it. I guess it must be something the old timers did, its the way my mom taught me and her mom taught her. Great video! I have only made pickles one time and they all turned out soft even with pickle crisp😭😭😭 i havent done them since. Definitely will try this method
Thanks for sharing. I haven’t seen anyone else do it that way. I like this method because they don’t get cooked, I think that helps with crispness. Good luck !
I canned 16 quarts of pickled okra yesterday (08/04/23). I did 7 jars with your recipe (with a little adjustment to the spices) and technique and 9 jars using another recipe and technique which included water bath canning. One of those jars didn't seal (isn't that weird that the jar that was water bathed didn't seal), so I put it in the refrigerator. We tried it today and it was a little soggy. So, we'll let you know in about a month how your recipe and technique turned out. I have a feeling it is going to be really good. And btw, all 7 jars sealed using your method. I almost chickened out and put them in the water bath canner but refrained. I'm so glad I did. There was still warmth coming from those jars probably 18-20 hours later. I wrapped them up very well with a bath towel.
I am glad to hear that and hope you like them! If you think about it crock pickles require NO cooking, so this way is great. I hate to hear the others were soggy but glad to hear our recipe worked out. Thank you for sharing!! 🙂
@@metcalfmills5679 I opened the first jar of okra made from your recipe (08/24/23). It wasn't quite 3 weeks since we canned it. Yep, this is the way to pickle okra.
JUST NOW WATCHING YOUR VIDEO! I've made dill pickles and jarred them like you do. I used an old-fashioned recipe that was slightly different. If you see this comment I might compare pickle recipes. Especially one ancient recipe using "Store bought pickes" which, by the way are simply DELICIOUS!! THANK YOU From the State of Minnesota U.S.A!
Hi Justro , I just watched Mrs.Tippers video and She mentioned you & your recipe , I had emergency back surgery then caught SEPSIS but survived , so My granddaughters have been helping my husband and some got so fat & yellow, but they are still nice and hard , They should be ok ? Thank you for all you teach us all and God bless you & the Girls ❤ Mrs josette Tharp Montgomery County, Texas 🙏🙏🙏🙏❤❤❤❤
Howdy Mrs. Josette, I have missed seeing you on here. I am so sorry to hear that but glad you are getting better. You can try them and see, I know they make salt pickles out of the big ones. I can’t really guarantee anything. I appreciate y’all so much, God bless you all as well❤️🙏🏻❤️🙏🏻❤️🙏🏻
@@metcalfmills5679 I'm not talking about the ones that do not seal, I'm talking about the ones do not LOSE there seal. I guess you can eat those also after two weeks. I assume there better with age, right?
Hi Justin! I just made my first batch of your dill pickles. Excited to see how they turn out. I'm wondering if I could use the same recipe for pickled okra? Recon that would work?
I'm going to try your recipe. I've made the Icicle Pickles (crunchy-sweet) for years, but I've never tried to make dill pickles. I saw that Tipper Presley recommended your recipe on her "Celebrating Appalachia" channel. I would enjoy watching a conversation between the two of you - I'm thinking it would be quite entertaining. Thank you for posting this Justin!!
Howdy Kathy, I hope you like that recipe. Seems like most everybody that tries it does. I appreciate Mrs Tipper so much. I am looking forward to that as well. Thank you for watching!
It is and when making fermented vegetables like pickles (cabbage has it in them too) it helps with the fermentation process. I wash mine by hand using just my hands to get dirt off but I try to preserve just some of the “film” for that purpose. I remember the big pickle barrel in the country store and that’s the way those pickles were preserved.
Just now found this video upon other recommendations. Can’t wait to try this recipe out. One question I do have is all my pickles are stored in the fridge so I’m curious if they need to be room temp before we start the pickling process.
Tipper sent me too! Sometimes I find the thought of canning intimidating, but you gave me confidence... I can DO this! I subscribed because I need a lotta guidance.
I’m making the dill pickles tomorrow morning for the first time. I got your information from Tippers page! I’ll let you know how they work out. I subscribed to your RU-vid page. Thank you for the pickle recipe.🥰
Thanks, Justro...Do you have a recipe for sweet bread & butter pickles? I love all kinds of pickles! I'm gonna write this one down to use... Thanks for sharing your knowledge on such matters... Greatly appreciated 💝
Howdy Sunny Smile, I cannot guarantee it, but we quarter some, halve some, and cut some up in rround and they all do pretty good. I hope they turn out great for you! Thank you for watching.
Tipper follower also. Thank you very much for showing folk the way to make good pickles. Do you think I could add a hot pepper or two to make a spicer pickle? Thanks for your time, Sir! Mac
Howdy Mac, I appreciate Mrs. Tipper. This is a wonderful recipe and I am thankful that I can share with so many people. Yes we do add peppers to our pickles and it works great! My little girl Charlotte don’t like spicy stuff yet so we mostly hold off on them for now. Thank you for watching. I appreciate you!
I think the brine and seasoning recipe is worth trying since I'm always looking for that dill flavor but the method is a bit too rebel for me. The crispness of these pickles is 90% the result of the alum
this is just like my grandma's pickle recipe except she also put 6-10 whole peppercorns in each jar and then after they were filled and lids on, she would turn them upside down on the towel until they sealed and then turned them right side up
Discovered your channel from Tipper at celebrating appalachia. Just wondering if I use fresh dill vs dried is the measurement different? Cant wait to try these. I'll be going down the youtube rabbit hole watching your other videos.
Howdy Jen, I usually just do like Mrs. Tipper and put the amount I think is good. Although the deal could be different, so it would be hard to say exactly. If I figure out anything more about that, I will let you all know. I so appreciate Mrs. Tipper and I am glad you are here. Hope you enjoy!
@metcalfmills5679 thanks! I'll just cook from the heart. May try a little more in one and less in another for my first round to see what tastes best, neither could be bad. Opening 2 jars for a taste test means more pickles for me 😆
