Ill be covering bottling and carbonating in another video soon! But if you cant wait, when bottling (assuming your water kefir is fully fermented) i usually add a tablespoon of sugar to the bottle before adding the water kefir + any flavouring to ensure a good carbonation.

You just put the grains into a jar with water and 1 or 2 spoons of sugar and put into the fridge

The instructions that came with my grains mention adding molasses as a source of minerals for the grains. Have you found the need to introduce mineral sources to your kefir?

I have used molasses and brown sugars and other than the flavor I dont think it has a noticeable impact, I like to use white sugar because it has a neutral flavor compared to molasses.

If anyone knows, I'd appreciate an answer to my question. Does the finished product have sugar and will it raise blood sugar levels or do the kefir bacteria consume all the sugar? I ask because cancer feeds on sugar so it's best to avoid if you have cancer.

The kefir culture consume about the 80 percent of the initial sugar and also the sugar in the kefir is fructuose kind, with is metabolized in liver, and for those reasons don't raise the blood sugar levels, the same reason because fruits aren't forbide to diabetic pp.

Can we use the kefir in the milk to do the fermentation in water or the milk kefir is different?

Milk will ferment on its own at room temperature. You can also buy some store bought kefir or yogurt and add it to milk and it's done let it ferment. As you drink it you add fresh milk and the bacteria eat up the lactose. Think of it like you are farming these bacteria. They need food too. The lactose sugars

​@akbananachucker2441 - Not even Close.. I make Both types of Kefir, Water/ Milk.. if You research where they Both Originate from you'll Understand and Know.. WK Grains came off a type of Cactus in the SW- USA, MK Grains Origins are from the Northern Caucasus Mountains of Russia where they evolved into being over a very long time of fermenting milk...

If kefir has a similar makeup to a SCOBY with kombucha, then your alcohol caps pretty low because the alcohol is a byproduct of the yeast, but many of the bacteria in the solution consume alcohol and break it into different acids, which gives kombucha (and presumably kefir) a low pH. High alcohol kombucha requires you to ferment the drink a second time without the Scoby, and with wine or champagne yeast added.

I'm not sure why, but "water kefir" sounds extremely offensive. Kefir is kefir. Water is not kefir.

I’m guessing it’s a way to differentiate between this and milk kefir since the two typically use different types of grains, use different mediums and taste very different

NO one is talking about sugar content that is left after the ferment. You say 60 gr. per litre, after 48 hour how much of that 60 grams if left? Otherwise you have a drink that has 50 grams of sugar like i measured myself. I did not drink because of that.

That’s a bit nit picky 🤨it would have to be far less than coke ,mountain dew or any of that crap and it doesn’t have all the chemicals etc in it.

@@youtuber-452 I know all about it and I know about Diet Coke as I was addicted to it and it has taken me a long time to get rid of it because if I didn’t have some within 12hrs I couldn’t function and a headache I couldn’t get rid of so I had to slowly reduce the amount I had and I have been cooking food from scratch for a long time and make fermented foods and am learning to make yogurt and cheese from home I also have a garden with as much food and medicinal plants as I can grow and make Oregano oil etc I even make my own hair spray. My point was a little treat every now and than is ok

Well nice to hear that, I'm trying to use less sugar in my kefir so that it almost eats the entire amount of sugar. Probably around 25 grams (6 table spoons for you) and a 3 days ferment. Good luck 🤞 with your health.

Which part, if I may ask? It's essentially a naturally carbonated soda water. Cool, sure, but I wouldn't say it's nuts or anything. A lot of asain cultures use fermentation and pickling, but that's something completely different, as a way for preparing food and drinks. It can take flavors to a whole new level, on top of things like carbonating beverages.
