You should try to also use the black & white mode of the highlight view! It helps to get a better idea of the actual alpha channel and the Clean Black/White etc will also make more sense 😉

Depends on what you are trying to achieve - as said in the video it can be difficult to isolate the skin tones depending on what else you have in the scene. But I usually combine it with a Power Window, when I do it and track the power window, so it stays locked to the face / person :-)
I prefer to have full control within my Node Tree, especially since I often shoot with different cameras and it give me an easier and faster overview. I also feel more sure that I'm actually working within and exporting to the color spaces I want to, rather than letting the project settings handle it. That's just my personal preference - there's nothing wrong with setting it up in the project settings for most workflows :-)
