Steve, amazing stuff! Aspiring ice cream shop owner here. What’s your opinion on ice cream freezers that’s not display cabinets?Would those flip top freezers keep ice creams fresh longer? Could I offer more flavors effectively that way without compromising the quality? Or do you think customers really want the display case?
DO you have a video that your are mixing flavors or extracts into a Custard base? and also taking a ice cream mix adding citric acid and what not to make a sorbet

Steve! I love your videos! I'm new to the ice cream business. I am currently making ice cream by hand with basic heavy whipping cream in a mixer and my own signature flavors. This obviously is not sustainable but my flavors and minimal ingredients are what my customers love. My question is: would you recommend switching over to a bag ice cream mix; what ingredients are in the bag? Do I need to invest in an ice cream maker to use the mix? Thank you!
