Can we talk about how she just casually mentions the khantoke, like the one that she is using is no big deal? That thing is fit for a palace, and I have no idea where a peasant such as myself could find such a masterpiece.
i’m from northern of thailand, and i’m so happy and proud that miss hong have presented “laab kua” in this video cuz most foreigners who know this menu only knew the isaan-style one, which is okay, but in my opinion, the northern-style laab is the supreme one 😂
Just want to explain a bit. This Laab is from northern Thailand and it’s totally different from I-saan’s(northeastern) Laab which is also a regional dish too. Even in Thailand, I-saan’s Laab is regarded as more commonly known because of the number internal migrants from I-saan to Bangkok. Plz note that Central region doesn’t have a dish like northern or northeastern Laab. 😊
แจ่มว้าวมาก! (Exceptional!) This is how you do regional Thai dish like this. With proper Thai chef. And I really love how she corrected the pronunciation of the word a lot. You have made our ancestors happy! ปลื้มครับ ❤
This is the most authentic one I've ever seen. It's true to the point that you might not get this exact ลาบ's recipe in Bangkok and can only find it in the Northern Thailand.
Love how you decided to introduce laab kua instead of the more well known northeast laab! As a thai person myself I’m happy to see variety of thai dishes being introduced to people all around the world.
I'm an Isan boy, and it's interesting to see a Northern variation of my home culture's common dish. Thanks Epicurious and chef Hong for such a wonderful, delicious, and educational presentation! Hope to see more collaborations from these two.
The way she's really reining over her accent and try to hold back to not went on full Thai on us everytime she has the opportunity to speak Thai hahahah, such a gorgeous chef that knows her stuff!
I'd never seen a steamer setup like that. It was so cool and now I want one, but I have to stop buying kitchen tools based around all the food videos that I watch!
They're common here in Florida but Pinellas park is one of the biggest vietnamese communities in the country, so there's a lot of asian markets. I have a set up like that myself and I'm just a black dude from the hood, lol but I'm always in the asian markets
Almost every southeast Asian american has it. You can buy it at a thai or lao supermarket, but they're rare. Not sure about 99 Ranch since it's a Chinese grocery store.
Her English is very clear and useful for beginner like me. Her dish also looks yummy! It was prepared in proper way and I'm really proud of it. If anyone come to Thailand, I recommend to try this dish. It's absolutely amazing!
Finally, a video of a legit way to cook ลาบ. Sending the link to my friend in the uk right now. This lovely chef just helped me saving my time. Explaining my friend how to cook through a video call last time was such a pain.
Born and raised in Chiang Mai and another 15+ y in the State. I've never heard any Thai chef pronounce "LAAB" as "LARB" until today! It's always been "laab," and I'm proud to say I finally found a chef, Chef Hong, who knows it too! lol
Wow!! 🎉😊😊 this dish is excellent 👌!! I can imagine the combinations of the various spices would lend it some serious flavor profile. I appreciate the diversity that Epicurious provides. It shows that food is one of the international languages that brings people together ❤
I never knew that there’s a different variation of laab from Northern Thailand. While you’re cooking I was in awe in every step. Not cooking the mince pork in water All those spices The pork liver No lime Dry laab I wanna try this next week after Songkran.
I’m from Thailand i ‘m so glad to see thai food being made in a correct way. Keep in mind that this is very very traditional way, although in modern thai home we use kitchen appliances to help doing some of the process quickly. Some purists would say using modern kitchen tools is not the right way but well… 🤷🏻.
I was following this ch and this clip would be the most of my favourite. The north Thai's food may not spicy like E-san(northern) of another region of Thailand, but charmed with natural taste combination. LAAB is the one of famous and historic food of the North. In the past, we didn't eat Laab often because its must be exchanged for the life of one large animal (buffalo meat, but nowadays we always use pork) and use a many ingredients also a lot of process to make a dish. So, Laab is food that can be eaten when there is a ritual or event that has a large gathering of people. In this video, it's not an original process to make Laab but it's easy way to get this dish in 30 minute and by two hands. If anyone have been visiting Chiangmai, I suggest Laab Loong Gan (ลาบลุงแก่น) - my favourite Laab shop there are making original taste of the North Laab and you can try buffalo meat Laab.
Northern Laab is a crucial menus at my in-laws house in Phrae. Because they usually need a hand to laab(mince) it properly (which is my usual job 😂). My father in law especially dictates me to co-operate all the clotted pork blood completely into minced pork.
Awesome video. I would love it! My grandma from Northern Germany also had a few recipes combining pork liver and pork meat. The memory of this little commonality made me smile with a warm heart. Thank you for sharing.
i need to order Laab Kua (and northern sausage called Sai Ua) from Northern Thai restaurant now😂 thank you Chef Hong. My first time exploring this channel.
So that’s what it is!! Sawtooth coriander! I watched because I wanted to know what’s the green herb in the laab / larb that I love to eat but don’t recognise. And the Thai peppercorn!!! Now I know!
Larb is one of my fav Thai dishes for sure. Many any Thai dishes are being eaten in Laos too. Fun fact, Larb is Laos' national dish. This implies how Thai cultures play big roles in Laos 😁
Larb is also eaten in other Southeast Asian countries where the Lao have migrated and extended their influence. Local variants of larb also feature in the cuisines of the Nothern Thailand, Eastern Thailand, Nothern Cambodia, Tai peoples of Shan State, Burma, and Yunnan Province, China
FYI sometimes Northern Thai people eat Laab raw with pork( which i dont recommnend) and Buffalo meat ( which is sooo delicious but the doctor will not reccommend either)
They enjoy pork brain and frog pudding in banana leave also. Super delicious !! Don't worry those special menu isn't that easily found in normal restaurants.
I prefer Lāab Khúa than Lāab. In term of richer flavour and aroma. But I would like to introduce using diacritics in Thai Romanisation. Laab or correctly “Lāb” means a dish or cooking a dish like this. Kûua or “Khúa” to roast or to parch. “Prík Lāab” is easier to called than lāab mixture. And I prefer using rice cooker to cook glutinous rice or khâo nìíao or steamed in bamboo steamer instead of “Huad” even it’s also bamboo-made but different shape. Additionally while Lāabing we actually add pig liquid blood to the meat. Adding more flavour and liquid to the meat
