Chilean plant-based food company NotCo has used AI to create imitation turtle meat. Turtle soup is a delicacy in several parts of Asia and Latin America, but it’s often made with endangered green turtles. NotCo says their turtle meat alternative is meant to raise awareness about the threats faced by green turtles in the wild, and show how AI programs can help imitate animal products with plants.
