Ive brewed for about 5 years and never had one explode. You give great advice! Just purchased a jun scoby bc of your advice and ive loved it!

I always use at least 1 plastic bottle for my final ferment, this allows me to feel when the carbonation is right and put the whole batch in the fridge.

Great tips! I store mine in a cooler (with nothing else; just used as storage). It's only after when I go to drink it that I *sometimes* have a liquid explosion, but I see now that I've got to refrigerate them for a good bit. Thanks! I have on occasion put a large Ziploc bag over the top of the bottle while it's sitting in a bowl and that way I don't lose any liquid.

When you add a fermented bottle to the fridge it doesn't actually kill your culture. It does send it into a bit of a hibernation. I've never done kombucha before, but I'm a full spectrum home fermenter and brewer for most of my lifetime. I'm about to start my first kombucha batch. Super excited. Love your content and articles on your site.

I did my first F2 using your recipe with you organic strawberries left it in the cabinet for two days 18 hours opened up one of the bottles exploded everywhere after I put it in the freezer for 15 minutes. I moved all the bottles to the refrigerator and opened them up a day and a half later this time I went outside and it exploded. I open the remaining side of bottles a day and a half later everyone exploded like, a bottle of champagne that was shaken. Not sure why because the chili did not work and I didn’t keep them in the airtight flip bottles for more than three days. It definitely made some serious carbonation. Bottles never exploded, so love the tip on which wants to buy.

So what exactly is one to do when purchased from someone else and you have to burp it - otherwise it will overflow when you open?

I just had a BIG bottle of kombucha explode at 3:30 this morning. Such a drag to clean up and to lose so much of my tasty and healthy beverage!

I use a large sealed containers to F2 ferment my bottles in. If a bottle leaks or cracks, I only need to clean everything inside of the plastic container. Fingers crossed I never experience an explosion.

Last year I had bottles explode twice. First time was a bottle from the store that had kombucha in it originally. The second time it happened it was three no name flip top bottles I had purchased from Amazon. I was doing a second fermentation with the bottles setting on top of a mini fridge that was on top of a dresser, some folks call it a chest of drawers. If any one would have been anywhere near them, they could have easily been injured or killed. I know this sounds like an exaggeration. One of the bottoms of the flip top bottles sliced a circular ring in the ceiling of my bed room ceiling and their were shards of glass covering at least half of my bedroom.

@@georgepagakis9854 George, I would say your right. I was using frozen fruit mix from the local grocery store. I ran it through the blender, then added to my bottles. Some of the bottles were so pressured up, no matter how long I left them in the fridge, once I finally was able to get the bottle open, their was only about half of it left. I like lots of carbonation, but whew.

Explosion whats that? I NEVER get good carbonation in the second ferment, if any at all, and so I end up with a drink with 6% sugar or more which is a bit high for my low card lifestyle. I use a 50ml fruit juice extract like pineapple or grape (directly from fresh fruit) /330ml bottle. I rest it in the bottle 5 days (27C) before refrigeration. I cant work out whats happening, must be my 8th brew up since i started.

Was it refrigerated well, so the CO2 was forced into solution and making it less fizzy? I have had crazy foaming before refrigerating, and a lovely gentle bubble after its chilled well...big difference in carbonation levels...

I hope one day more people can try to brew kombucha at home...its just so interesting to watch the whole process unfold, and experimenting with different brew times and flavours is so exciting 😀 Take care.

The point she misses is that excessive pressure buildup resulting in an explosion can be caused by the amount of sugar added at the beginning of the second fermentation. Think about it. Adding a lot of sugar is exacerbating the carbonation process.

I've always been curious why you steep your loose leaf tea for 15 minutes, I had heard you shouldn't steep teabags for too long because they will begin to release bitter tastes (I'm a first time brewer and my first batch will be done soon). I personally chose to use more loose leaf than you recommended but only for 10 minutes because that was the longest steeping time I have heard for any tea.

I follow the short steep for drinking hot tea. For kombucha, i also brew longer and ive never had the bitterness you would experience if drinking hot over brewed tea.

Loose leaf tea tends to be higher quality and isn’t as bitter as tea bags

So I bought my bottles with the flip top, from amazon. The reviews said others used them for kombucha. My second time fermenting my second batch I had a bottle explode while sitting on the counter overnight during night 3. I put the rest of the bottles that did not explode into the fridge since I was afraid. I did not burp the bottles. I'm not sure if I should but less fruit? Leave more space at the top? I kinda of went into this process thinking I wouldn't have an explosion and here we are.. I'll probably put the bottles in an unchilled cooler from now on.

@@YouBrewKombucha Thank you. After I posted this I went to your website and realized I missed that. My bottles were the square flip tops, oops. I purchased a much sturdier set and have I think 7 12oz bottles on there second ferment! Fingers crossed!

@@ruthannscanzillosmusicmusi5389 the glass shattered all over. The bottle exploded. The flop top was actually still shut to the glass top, that's how I knew it was the glass being too thin

Maybe we can also put 1 bottled kombucha in 1 ziplock bag. So if a bottle explodes, the glass shards will be in the ziplock bag.

Their is no plastic bag that will contain an exploding glass bottle of kombucha. It'll tear through the bag like it isn't even there.

Yes, but I don't suggest more than 4-8 oz per day. I say this because one of the awesome benefits of kombucha is that it is natural probiotic and will have your GI tract moving regularly. Too much kombucha will have you in a "situation". I had two family members ignore this suggestion & they were going to relieve themselves more than normal.

I think she has the definition of exploding wrong. When you open it, it just sprays everywhere until there is like an inch of kombucha left in the bottle. I burped my bottles today after 2? days of the second fermentation and all but one bottle sprayed all over me and my back deck. The last time I brewed, over a year ago, it sprayed all over the inside of my house and I stopped completely. What can I do?!?

Kombucha bottles should be vented while brewing. The kombucha that I have brewed over the last 20+ years did not develop much pressure. Perhaps there is something else, like yeast, in your kombucha that is developing the pressure.
