I was always 3-3.5. I found in louder clubs and events it was a bit better to have it a little lighter to absorb the vibrations. I also turned the cartridges a little sideways. It seemed to track better in seratol. Best thing I ever did was get rid of the tone arms lol.

keep those at zero unless your tone arm isn't parallel with the record.

I just took out my turntables super excited to properly balance them. I don’t normally use them but the rest of the dials on the tone arm like the the anti-skate do we have to adjust that as well and will it affect the needles?

When scratching or beat juggling it jumps to a new point the track a lot. I think it’s because I have heavy hands (ortofon mix needle). I usually run about 2.5-3g. I also set the height at 0. Should I be making an adjustment or just get smoother with it

I would put the weight heavier around 3.5 and just practice being more light handed. remember you don't have to press hard or use much strength at all to cut and beat juggle.

What if your needle sounds like it’s scratching across the record? The cartridge rather I guess. As it’s just playing a song?

Don't cartridges come with recommended tracking force specs? Get a cheap digital scale and go by specific specs would be best.
