How to Blanch and Freeze a Lot of Kale

I made a video a couple years ago about how to blanch and freeze a small batch of kale for such instances as when it's summer and your garden is producing more than you can eat. In this video I show how I process the large amounts that I have still growing in late fall - when the kale is simultaneously at its best - and at risk of being lost to hard frosts.

Yep...kale, collards and spinach are my favorite. We do ours exactly the same...we use a plastic ice cream container and do 3 levels of kale with wax paper between. Then when it freezes we tip out the 3 kale cakes and put in ziploc bags Just as a side note I did kale done in some duck fat with leeks last night (oh yea I save the duck fat when I roast those babies....yummy goodness!) and it was awesome! I ate all of my kale. I will be growing tons more next year to keep me going through next winter.

Definitely growing kale next year! I love broccoli Rabi but it's much more difficult to grow than kale and it won't go all summer like kale - basically you pick it once and it's done so I gave up on growing that. BTW you inspired me to put garlic in with all your garlic videos. I just planted a couple days ago :).

Hope your garlic turn out well! The ground is freezing here so it would be too late to plant them where I am - hope you are further south :)

@@maritimegardening4887 yeah I'm down near Philly in PA and other than a couple brief cold snaps it's been pretty mild so far. If I would have planted much earlier they probably would have started growing too much.

Hello Greg, One of the few good things in the garden that living in S. Texas is, that I can leave it out and harvest as I need it, but good to know if I had to store it. I was surprised to see the kale kept its beautiful green color after being boiled for a minute. Thank you sharing. 😉

Every year I think I plant enough kale to freeze at the end of the season. Seems we just eat more if we grow more. Guess we're doing three beds next year!

So. Simple! Thank you. I didn't grow kale this past season due to a flea beetle war the previous year. But think that I'll give kale another try next year. I am switching to a no dig, no till, deep mulch garden and hoping that the flea beetles won't be able to find the kale in the hay, lol. Any flea beetle containment advice?

Use a pyrethrin spray when they are are small. Once they are 5-6" high - they can shrug off the flea beetle attacks

Thanks for the video. I have to do mine too. I just don’t like going out when it’s in the low 30s. It’s suppose to go into the 40s this week so I’ll get it then. Do you grow different kinds of kale or just one kind? When you destemmed the kale was it all just one kind? If it is and you only grow one kind, can you mix different kinds of kale?

I always grow at least two kinds. This year I have siberian kale and winterbore kale

@@maritimegardening4887 I have tried a lot of them, but have settled on Red Russian and Dinosaur kale. I had tried some of the curly kales but didn’t like them raw and didn’t care for them as much in soups and smoothies either. This year is my third year with the Red Russian kale and they came up all over the garden in various areas that I had never planted them in. 😄. I let them continue to grow.

@@CuriousinNY I agree - the curly kales do not taste as good - but they are more slug-proof - so I like them for that reason :)

I showed a chart of boiling times, and explained that I prefer to boil it until steam escapes from the lid because that's a simpler way to do it.

Re: hygiene - Home kitchen rules are different than institutional kitchen rules :) It's going in the freezer, and then will be thawed and cooked when I eat it. Not much risk there. Regarding the ice - not needed. The goal is to stop the cooking. If you have enough cool water that goal is achieved.
