Again, thank you for sharing. Thank you for teaching. Tip: I have a stock pot with a pasta insert. This is what I use for blanching. Add vegetables to the insert and then put in boiling water. When blanching is over, transfer the insert to the container filled with ice water. Lift from the ice water, let drain a bit and then pour onto trays sitting over the kitchen sink. Let drain, while the next batch is being processed. (Or transfer to towel, if tray can't fit over the sink.) Merry Christmas!

Same to you! And yes, but remember..I cut it pretty small to begin with, but considering it's like 99% water (might be a bit of an exaggeration), it's going to shrink down a ton!

Hi darcy first off thanks for the videos they're very informative. Do you salt your blanching water? And do I need to blanch frozen blue berries?

I do not salt before blanching when preserving. Frozen blueberries shouldn't need to be blanched because the freezing process is one of the ways to break the skin. If you find they aren't popping when thawing, you can gently press them to help it along. But be sure to use some protection on your trays - they may stain.

HMMM! I have never blanched celery. I dry it to use in recipes. I try to grow it year around - think I lost it this year due to the extremely cold temps we are having. Have you found a difference if you do not blanch. I might have put mine in lemon juice acid also - color is beautiful.

I think it’s better to steam blanch and easier. I just load the basket on top of a kettle and when done lower the basket into cold water than lift out to drain. I keep the water cold with frozen pop bottles and take out to get basket into bowl. I’m sure it would retain more flavor and nutrients plus there is no waiting for water to return to boil. My only question is how long to steam? Should sliced potatoes be totally opaque? I just didn’t want them to cook to mush stage. Have you or anyone tried this and if so do you go by color change? It saves water for those that buy water also. I’m new to dehydrating, but not freezing.

Darcy do we have to blanch Cucumbers? because I didn’t and I dehydrated them into tiny cubes and when I Want Tzatzki dip I just add a 1/2 cup don’t even redyhydrate but wait awhile so it plumps up just as is I had put fresh cucumber in there and boy is that ever good !

I hope my question is relevant. I recently tried my can of kale from Thrive Life. It appeared to have been blanched before freeze drying. Would you suggest blanching spinach, kale, beet greens, collards, and such before dehydrating if using in soups? Or is it a preference thing? I just had to replace my dehydrator and I have learned so much from your channel. Thank you.

@@raydeenjaques2048 Thrive - I was too. I DO NOT blanch greens - the whole idea is to get the nutrition and blanching is one more step that take the nutrition out.

What to do with the leftover water? I would water a plant with it when it’s cool if I didn’t need it for cooking. That’s something I do with my egg water after I boil them. That water has calcium from the egg shells.
