Microgreens, once found primarily on fancy restaurant plates, have recently become more widely available in specialty stores and supermarkets. They are the first early, tiny shoots of herbs, lettuces, or other greens. Some of the most common options are arugula, beet greens, cilantro, basil, mustard greens, or salad mix varieties.

Lots of good ones here. Some I've never thought about (clover for instance). Might only add beets, buckwheat, popcorn, and fava shoots! Great micros to look out for.

I could not consistently find them in the store. So now I grow my own. You can find lots of pea, sunflower and wheatgrass micro greens. But broccoli whose seeds are expensive because they have been proven to fight cancer have expensive seeds and often cannot be found in the store. Myself I have chosen to grow my own micro greens. My mainstays are peas and broccoli. In addition I grow wasabi, fenugreek, purple cabbage, wheatgrass, brassica, purple reddish and my plan when I find the seeds I want to learn to grow bulls blood beets.

Pea, sunflower, and radish are great, and basil and broccoli are incredibly tasty and very nutritious. They can be hard to find in supermarkets, but not for long, I bet. They are pricey and that's a problem, but many supermarkets are pricey too. You can grow them at home, though, even in a small space, and the taste and freshness is tremendous, especially in winter months when fresh green tastes and fragrances are so sought after but so hard to come by.

Stacy Hackney easy 2 ways. 1. Use jar with fine mesh over top rinse seeds in jar and strain out excess water. Rinse & drain about 2-4 xs daily. They'll sprout in a few days to a week depending on type of seed. 2. Layer 3 paper towels on metal half pan or something else like it. Spray water from spray bottle til fully dampened- Not soaked. Spread out seeds in single layer & fold over paper towels. Check often daily to keep it damp. You will see change when starts to sprout. When size you want eat.

I use a 2qt mason jar with a mesh lid and seeds from sproutpeople .. sproutpeople.org/seeds/microgreens/ I also make kraut in 2qt mason jars ..

So, as I recall, sprouts were getting really big about five years ago till it came out how susceptible they are to contamination with e.coli and salmonella, to the point where most restaurant chains that had them on the menu dropped them for liability reasons. How has that changed today? The government still cautions using them raw - www.foodsafety.gov/keep/types/fruits/sprouts.html so why would I want ANY of them in my dishes?

Sam Groves totally understand this. However, most high volume microgreen farmers are very serious about sanitation - look for those who've been at it for a while and you can also ask if they are GAP certified (the farming equivalent of having an inspected kitchen).

Which is not to eliminate the prospect of Macro-green contamination, as in the recent e-coli/lettuce news.

OhRick certainly always a risk, especially from large producers. I say high volume but I'm still talking pretty small scale, local or at least regional producers where you can still actually talk to the main grower.

Yes it a obvious problem with the acoustics of the kitchen stray sound waves from his voice is bouncing off of the metallic cook ware a few ways they could fix this is by tuning out the frequency of the noice in post in a program like adobe premiere pro or they could just use a better mic

Pretty basic. Unlike tv show you have quite a bit of echo off all those hard surfaces. Need something soft to deaden the echo & improve sound.
