Gong Fu Cha is a Chinese way to brew tea. A large amount of tea leaf brews in small vessels for a short time. Depending on the tea, the same tea leaves are often steeped up to 10 times or more. When brewing tea in the Gong Fu style, we allow it to gradually show itself. No cup of tea is the same. With each brew, we experience new tastes and aromas. Gong Fu Cha is a slow journey filled with discovery and tranquility.
There are many aspects to Gong Fu Cha. In this short video, we will show the basics of the technical side of it: how to brew tea using either Gaiwan or Teapot (in this case, yixing teapot).

How did people do this in the past? Specifically without an electric kettle, did they just have a constantly burning fire next to them for heating more water? Thank you for the short and easy to understand guide by the way.

Thank you for the thank you:) In the past (just as now, in many places) people were burning charcoal that retains heat for quite some time - plenty to reboil water time after time.

Just recently had an amazing tea experience. Shou puerh tea that used black tea kombucha instead of spring water for fermentation. I hope this becomes a regular option. I hope you get to experience this amazing tea yourself. Even better if you found some to offer for sale.

Need to clean the outside of your electric kettle. Clean it as usual, then put some coconut or olive oil (just a bit!) on a paper towel or cloth and rub all over the 'stainless' steel exterior. You should not fell any oil on the metal, but it will polish it up like new and help resist water drops and fingerprints (for awhile...). Works on all stainless appliances (including fridges).

Hello! I'm starting to gong fu brew and I was wondering the ml sizes of the wee cups, sharing jug and the gaiwan/teapot?

Hello Jessica:) The standard size of a gaiwan or teapot is considered to be 110-120ml. And cups are usually anywhere between 20-50ml. Of course, some people prefer smaller teapots and some larger ones. Gong Fu teapots usually range anywhere between 80ml - 250ml, and sometimes even bigger, for serving larger groups.

Does that make a big difference heating up the tea leaves in the pot before pouring hot water ?

A few factors make this step important: 1: Heating up teaware before brewing ensures that when you brew, the water temperature won't drop. If you have a relatively cold teapot, cha hai, and cups, they all use up heat. 2: Warming up tea leaves opens up the aroma. Enjoying aroma is one of the most pleasant experiences, and aroma is one of the key features of tea. Once the leaves are warmed up, before getting to brew, open up the lid and smell the fragrance. 3: Warming tea leaves and preparing them for hot water allows both the aroma and taste to open up fuller.

I hear Gongfu style uses more tea leaves than western style? Is there a good way to determine how many leaves to use or would I be overthinking it?

it is true that in Gong Fu Cha tea to water ratio is higher than in the Western style. The ratio may vary depending on many factors, but generally speaking, it's around 1g:20-25ml

Hi there:) the general rule of thumb is 1g:25ml for green & white teas and 1:20 for the rest of them. But, of course, it’s all flexible and up to the personal taste
