Mine turned out unbelievable, thanks for the recipe, I’d take it over a brisket and a brisket done right is tough to beat.

I can vouch for this recipe, the fruit really helps especially if you add lemons! After brining I stuff the leftover pieces into the turkey cavity as it smokes.

Great Question. We cooked this at 275 for about 3.5 hours in the Pit Barrel Cooker. We have that video coming out tomorrow so you will have to wait in anticipation. ;)

# 1 are you brother postal worker? About the pit barrel, im thinking of buying one. Can I cook a Turkey just over coals no wood and no smoky rub. I want a natural tasting turkey. Will it taste to much like coal?

I do much of the same with my brine but I use molasses instead of brown sugar.

Do you rinse off the turkey before you cook it or just cook it... I have heard people do it both ways

I don't get adding a cup of salt and brown sugar plus all these other seasonings to your turkey? You don't need to HAMMER all of this to smoke a wonderful turkey. Just inject a little of what you like and smoke it. If you need that much stuff to make your turkey taste good you might be doing it wrong or you have a sweet tooth? Thanks for sharing!

Hey, injecting is a great method as well as using a dry brine. The purpose of the brine vs injection is more about the way it adds moisture throughout vs sectionally and the way the salt works on the proteins making it not only more juicy but tender. As for the sugar, it doesn't give it a very sweet taste at all (if any due the time it takes for sugars to penetrate) but again helps just balance, color and work the meat. End of the day you are right you don't need to brine (or inject) to make a wonderful turkey, but if you want to change things up, add some different flavours than these are options. That is the great thing about cooking, we can adapt to our taste and make things are own. Question: What's your go to injection recipe for your turkey? I always love trying what other people are doing. :)
