Hello guys,my name is Dimitris and i am fermentation and development chef , having said that, Thats the first video i m watching from you guys.. All i can say is keep up this phenomenal work.. i do A LOT of fermentation but thats my first time treading the path of this heavenly liquid. i have just started making my own beers and i have more questions i can handle alone, so you're videos are on the spot and exactly what i need.. i hope you keep up the good work and continue teaching us great stuff. Logan Beard Conspiracy Theories: My thought is that Logan trimmed his beard and added it to a starter to collect Logan Yeast Strain for his next beer.

For choosing hops, we totally recommend Hop Variety Handbook. Has all kinds of info on aroma, flavor, storage, and substitutes. Great info in this vid, thanks guys! Building a beer recipe from scratch ain't as easy as it seems. :)

Great resource for sure! YCH is the other big one I go to (although it doesn't have as many varietals as the handbook, it has great details)

Good video! I am fairly new to home brewing and quickly built up my home brewing gear and 2 tap kegerator.. I use BeerSmith mainly brewing all grain clone kits looking to expand into my own recipes. This videos helps.. Cheers!

I went by the guidelines for a saison and didn't look at other recipes and ended up making a terrible beer. I learned my lesson on that and will look at other recipes from now on.

So I used that brewers friend and it says the OG should be 1.073 prior to pitching but when I did my reading it was 1.019... what would have caused this or did I read it wrong?

Hi guys, quick question . I was reading that it is important to check that your beer bottles aren't chipped before drinking it? Is this even necessary? I purchased new bottles and made a stout. I'm close to trying one out...so it'll be tough to 'inspect' for chipped bottles. I hope that makes sense. Should I worry?

They are hearty buggers - unlike liquid they aren't stored or shipped to us cold. There is no risk of them starting to cannibalize one another like liquid, and because we turn them over super fast they are still perfectly viable stored at our room temperature. If any start to get on the old side we just pull them from inventory and make fantastic beer with them ourselves. Part of the benefit of being both a brewery and HBS is that we can make sure nothing we sell has a chance to get old :)

Style? What's on sale? This question lead to 3 -3pd cans Munich ex.. favorite grains, 8 oz of caramel malt 40L, 8oz of caramel malt 10L and 12 of caraplis malt/dextran. Did grains at 128 for 15 minutes then 154 for 15 minutes in 2 gallons spring water put in 6 gal pot and two more gallons of water stir in malt extract turn on heat. At boil put in 1/2 magnum 14.1 alphahop 14.2. At 15 put 1/2 Magnum hop in at 10,1oz citra hop for smell any floral hop will do and 1oz crystal 4.1 alpha 6.6 beta. That's how you made a home brew What on sell. Lol happy brewing

Why do you keep your dry yeasts on the wall but all brew shops I've been to have them in the fridge

Dry yeast doesn't need to be in the fridge. "Wet" or live yeast does. Dry yeast is considered "live" until you re hydrate and pitch it in the wort.

A couple reasons - first that is how they are stored and shipped from out distributors. They have reasonable long term viability outside of refrigerated temperatures, unlike liquid yeasts (which we obviously keep refrigerated). Second we turn our yeast selection very fast compared to other retailers, partly because we brew with them ourselves. If a batch is ever starting to get on the old side we will just pull them from inventory and make delicious beer with them ourselves. Third we actually keep the shop pretty cold compared to most stores. This is more for grain health than yeast health, but works for both. Lastly it's just something I started doing since the first commercial brewery I worked at stored their dry yeast at room temperature, and had consistent and fantastic beer. If the yeast needed to be stored for a long period of time I'd consider refrigerating, but at our turnover rate we've never had an issue worth prompting a change. They are hearty yeasts and when treated properly make great beer!

Interesting! My local store owner is religous about refrigeration but we do live down under and its been bloody hot here lately. Do you think dry yeast in a hotter climate like Australia should be refrigerated? I can sense another myth busting video..

From Mangrove Jacks: Store in original packaging in freezer for optimum 25 month life. At 20°C (68°F) storage temperature viability will remain high for 12 months. At 30°C (86°F) storage temperature viability will remain high for 4 months. Above 30°C (86°F) viability and yeast condition will become seriously compromised within 6 weeks.

I only have two batches under my belt and I got into brewing to make my own recipes and it's proving to be a learning curve. 16:50 the style calls for a top fermenting yeast and i'm guessing you just know the yeast you picked is top fermenting off the top of your head?

@@mattburesh2409 haha not my video but it's a simple concept. Ale yeasts are top fermenters and lager yeast are bottom fermenting. They all have unique qualities which will have an impact on the final product but that information is easy to find.
