The VictoriaInox are great commercial style knives, very practical and easy to use! Not the looker of some others but amazing to use and put up a lot of punishment and dont have to be handled with kidd gloves.

I love my nakiri, a Japanese vegetable knife. A lot like a santoku, but with a squared off 'tip' and a rounder corner.

I'm planning to build a leather knife roll soon. I'm gonna reverse the knives though so the blade edge is protected in a pocket (as opposed to the handle). That way the blade edges aren't knocking around on the other blades. I noticed your favorite tip-less knife also has some chips on the edge. Probably from hitting other knives in the bag... Something like this (The Stinger - Professional Chef's Leather Knife Roll - ZeeBee Leather) - but not $1,200 (!?!?!).

I like your homemade knife. I have several carbon steel chef and butcher knives(boning, fillet, cleavers, etc)that belonged to my father. He was a butcher and a cook. One is an original Buck 12" chefs knife that is at least 70 years old an holds an edge forever and the handle is split and needs to be repaired. The Buck blades were made from logging saw blades. The tang is braised to the blade. One of a kind. I use the knives daily. They are not meant to be in a drawer. I need a knife roll as well. Enjoyed the video.

I bought this Carhartt tool roll several weeks back after seeing Bradley's set up. Quality is good, but like he said, it's just way too short. I want something that will hold my slicers and cimeters as well. The search continues...

Id include a, Japanese Mandolin, mallet, citrus press, thermometer, weigh scale and a honing rod. E i, E i, Oh ... PS it's better with a Y peeler IMO

Suggestion, create or buy a leather sheath to protect those knife tips. Hope that helps.

If you buy the tool wrap just mod sow a length of leather across the top and fold over. Voila safe for long knives.

If you could only pick one meat slicing knife for every meat slicing need, would you choose serrated or smooth blade? I already bought a smooth bladed slicer and either I’m not sharpening it correctly or it just doesn’t slice brisket very well. I noticed after the fact that a lot of brisket how to videos show a serrated knife slicing up brisket so I’m wondering if I should get another slicing knife or if I just have to keep working at my sharpening skills. My last brisket was also just slightly over cooked so it was already falling apart, but even then it still felt like the knife just wasn’t cutting right.

Victorknox may be low end on price but certainly not on quality. Ergonicaly there great. I process my own deer and hogs and they don't wear out my hand and they don't slip. Many butcher shops only use them

Hey man what cook channels do you watch? RU-vid or TV? I've been watching an old show with Gordan Ramsay called Kitchen Nightmare, it's funny seeing all the people calling themselves Chefs that shouldn't be cooking at all. Also just waiting for your channel to blow up, I know it's going to happen some day, and then all the haters are gonna come in and slay everything you do, lol. Anyway, I enjoy it.

The shun is an 8" but you'll find a lot of bunka style knives in 165-190mm which I personally prefer as a chef

Never use a Shun knife on a poly cutting board. Use them on wood such as boos. They chip on poly boards because they're so thin. Trust me. Have two chipped up.

Just user error, i have got way harder and thinner knives than this shun vg10 stuff, never chipped so far. But yeah, end gratin wood is the best
