I have to bus a table tomorrow, my first day on the job. I'm 5'9 and weigh 143lb. I'm a bit worried about balancing that many plates. The last thing I want is a shaky arm if I'm not strong enough.

You don't have to carry so many plates, especially on your first day at work. We are all different people with different abilities. All you have to do is, work hard, stay positive and smile even if you feel like crying! The first days are always the hardest! Good luck!

I work as a busser for a Landry’s restaurant. This even showed me a bit of technique I didn’t have before, until now I’ve had to use a tray (which was its own battle to learn lol)

@@kvcharles4425 it really just depended on the size of the table, I tried to not have a tray at the tables first and foremost, but if it was a party table I would have a tray off to the side on a tray jack and stack everything and take it all away when I was done. If it was a 4 top I could generally clear it without a tray and would stack up my arm, which can look a lot more impressive than it actually is.

@@murkypotato6410 nice! Unfortunately for me I would have to go the unconventional route. I’m not privy to your method of clearing a table. However, I’m a host who takes calculated risks such as carrying slightly stacked in 1 hand and a tray of glasses in the other. I’m required to wear suits. If the plates have stuff underneath and I’m not able to see, I’m in trouble. Lol

Hi Tim, thank you for the suggestion! There are a lot of restaurants who don't allow the waiters to carry plates to or from the table with hands! I agree with that! It is faster and efficient and there is less contact between the hands of the waiter and the plates. You should not have problem with that though! Busing table with a tray is easier than with hands only. If you are using a try jack, you put it close to the table ( no too close though) and start again with the main course plates! Then everything else as side dishes and silverware! I am going to do second video on busing tables and I will try to mention some points about busing with tray! Good luck with the job and take care!

Im a busser at a red robin restaurant and ive had the same job for over 181/2 years and i can tell you ive never held dishes like that. I use a bus tub. I dont work in a fancy place. I appreciate the video and you showing those who do work in a fancy place how to do things. My work doesnt use the plates in the video. But great video overall for a learning experience.

I work in restaurant with 80% female employees and they all bus like pros.. I freaked out when I first started.. just saying don’t be fooled just cuz they are women they are just as capable as us men

I worked for many years in the busiest and second biggest restaurant in USA and those women were kicking ass but this video is for beginners and young girls who I have seen to many times already get injured trying to carry too many plates! that was my only concern to make this remark!

I’m a lefty and I feel more comfortable holding a pile of plates with my right arm. Tomorrow’s my first day and I’m wondering if that will be a problem?

Hi Jaden, it could be a problem if you are in the USA! You will have to remove the plates with your right hand from the right side of the guests, so if you have to remove a multiple plates, you will have to stack it in your left hand! After that there is no problem to transfer everything in your right hand but the procedure has to be done with right hand! It depends of the restaurant you are working on, of course! Talk with the managers and explain the situation! If they are OK to use your left hand, then everything is OK! Do not be affraid to ask your manager! Clear everything up front so you don't get in trouble afterwards. Good luck and come back to tell us how did it go!

Chris Martin Esto, it takes time like everything else to get used to and to get comfortable! If you are new I would suggest you practice at home or at the restaurant after work! But the main thing is to give yourself time to learn and get confidence in your actions! You will be fine! Good luck!

Hi Simpleng, not only it is okay to carry only what you can carry safely and securely, but it is mandatory! No one wants you to get hurt or break bunch of plates! The system that I show you here is to help you carry more plates easier, but in no case it is to push you over the limit and make you do something you are not capeable of doing!

Letizia Sales, we all understand that different people have different abilities and I am sure your managers and most importantly most of your coworkers will understand that you have problem. Mind you, not everyone will be understanding and kind to you and you have to know that with time you will grow stronger too and be able to do more, so don't give up at the very beginning when it is really the hardest! You should know too that our job is a hard job and carrying plates and running with it is a major part of our job and especially for a new (back up) waiter, try to do your best without hurting yourself! At the end the day, health is the single most important thing in human's life, don't jeopardize it! Good luck with the new job and come back to tell us how was your first day!

Some guests do finish their food faster and you find that some of their friends are yet to finish, do you wait for those who hv not yet finished , or you you should clear for those who are done already

You wait till all the guests are finished their meal, unless a guest asks you to remove his plate or psuhes the plate on the side, or stacks two plates on top of each other! But remember, every restaurant can implement their own rules, so follow the rule in your restaurant.

I need help they want me to do the busser I have long acrylic nails how am I going to balance plates he didn't say anything about holding up a tray or balancing plates he told me all I'm going to need to do is clean tables and help the server with food now I'm worried info please am I going to have to get my nails off this weekend and to do this job how long does it take to learn I mean are they going to give you a couple days of training or are they expect you to learn in one day

Not really but some people have problem carrying heavy food trays if they are too skinny or smal! In this case, you just have to find the proper job where there are no large food trays to carry!

HI Sean Karhan, it is the first time in my life someone is accusing me of being a sexist :) , but I guess there is a first time for everything! I worked with some of the strongest women in our business and if you have a chance to pass by The Grand Lux at the Venetian Las Vegas one day, you will know what do I mean! I still don't recommend to a girl or a woman, especially a new waitress to collect 8 kilograms of plates on one hand and carry that to the kitchen! It is not healthy! I have seen women with sever injuries from carrying too many plates all day long, so that is what I meant! But thanks for the point! I hope some of our female viewers will take a part of the discussion and let us know what do they think about it!

Yeah, I think it's mostly a matter of body anatomy rather than sexism. Like when advising grandparents not to do it, is not technically ageism either. Maybe we just need to present it as 'your muscularity might not have the ideal drive for this, etc..' Thanks for the vid chief!

Well I hope that's not true because they want me to do this tomorrow but it's weird the only thing that that my boss had said was I was going to clean tables and help with giving food to the server's I'm just reading these videos on my own he never said nothing about you're going to hold all these plates and put them on a tray and do all this other stuff I have acrylic nails how am I going to even do this am I going to have to obviously get them removed I mean honestly I don't think I can balance stuff on one arm I didn't even know that something had to do can someone help me on this is this for every restaurant and how much training do they get for you to learn

Great video! You are a very good Busser. In my restaurant, the servers swarm the tables and take all the plates. The Bussers take just the water and Wine glasses and reset the tables with the table cloths, silverwares and water and wine glasses. Also, for the plates, there is rarely plate that is entirely clean. there is usually some scraps on the plate. To be able to carry as many plates, you need to scrape all the scraps on the top plate and put all the clean plates underneath.

I find bussing tables so much harder than serving tables. Serving: everything is neat, clean and under control. Bussing: anything goes. Bussing is also different according to what cuisine the restaurant is serving. So many different types of bowls, plates, baskets, piled with different types of left over food....

Phoenix, I don't recommend carrying glasses and plates on the same tray! Off course, when the guests have left the restaurant and there are plates and glasses on the table, I too collect everything in one tray to save time!

@@CARYROJAS this is normal reaction, especially if you are young! Once you hit the floor you will find out that it is nothing scary and you will be fine! Just make sure you prepare yourself with carrying trays and carrying plates! Then you will do perfect! Best of luck!

LeMiSy01, great question! Unfortunately for the left handed in our job is very hard. My wife is left handed. All the rules and the etiquette are created for right handed! If you work in casual dining I would say you talk to your manager and ask for permission to bus the tables with left hand from the left side of the guests! that shouldn't be a huge problem for nobody! If you work in a fine dining it will be highly unlikely that they would allow to do that! Mostly because it will upset a large portion of your guests. You will have to learn to use your right hand and carry with the left! You won't be so efficient and you will be able to take and carry few plates at a time but you will still be able to perform your job! The most important think is not to worry about it too much! I have worked with many left handed waiters and they are doing excellent job! It is uncomfortable but you get used to! Don't forget to apologize to a guest who notice that and explain to him or her that you are lefty! they will understand! Thank you for the question and good luck!

Rebecca Sheldon, where exactly do I say that women can not carry so many plates? My words are that I don't recommend for the ladies to carry so many plates. Off course women can carry even more plates than some men. It is also true that I have seen many women getting injured carrying heavy loads of plates and that is the only reason for my recommendation. Still, everyone has the right to express their opinion and I do appreciate your input. In no case have I intended to say that women are no equal to men in our job, cause I have witnessed just the oposite all my life. Therefore if you personally felt offended by the comment, you have my sincere apologies. Thanks for watching.

You imply it by saying that women should ask for help, and that it is not recommended for women to carry so many plates. You imply that we are not strong. I'm sure men have gotten injuries from it too. Just because we are women does not mean we should not carry heavy loads of plates. I appreciate your apology though.

Rebecca Sheldon, thank you for accepting the apology! I see your point and if I had implied what you assume I have, it would have been wrong but don't forget that this is a tutorial video for new waiters and waitresses, mostly 18-22 years old who now start their career in our business and it is my responsibility to be completely honest with those guys about our job! One can assume that there are men who also get hurt carrying heavy loads of plates but I have girls coming to me in the restaurant every day with pain in their arms and limp fingers and therefore the warning! I don't allow girls in the restaurant to carry too many plates or tables or other too heavy things because for me the health of those young people is more important than everything! I hope you can also see my point of view! Anyway, I appreciate the input and I will definitely chose my words wisely in the future, because I have a mission and it is not to put women down!
