I really appreciate your time and effort in making such a useful video. I just butchered 4 lambs by following each one of your steps. You have a great style and the detail to which you go to made a challenging job very easy. Thanks mate.

Thanks very much for this great teaching video! My husband and I were able to butcher our goat following your instructions. Ken has never butchered anything and after doing it twice now he has done a very nice job indeed! Blessings on you from two Canadians living permanently in Baja Mexico in a little town in the mountains. We raise our own goats for milk, cheese and meat. And of course we have chickens. Adios Amigo.

I watch this every year to brush up on my skills. Only 4 lamb a year but is a must to make the magic happen.

Thanks so much for these videos. We just slaughtered and butchered 2 lambs 150 & 160 live weight. We ended up with 130lbs of meat and fat we rendered into tallow. We boned quite a lot of it out too, so I think we did fairly well. First time slaughtering / butchering lambs.

Might sound crazy, but if I can't fall asleep, I put one of theses videos or other cooking channels. There's something oddly soothing of methodical activities. The following day I then watch the video again for educational purposes :)

Me too! It is both soothing and educational . I killed a feral hog tonight Too near my garden. Its gutted and skinned and cooling in the freezer until tomorrow. Then I will review Scotts presentation and resume butchering. I'm only a quarter English. I had a mammy that I watched cook from my highchair . Yes, she was African American but she did not claim it. My great granddaddy, still alive was French . My mama was mixed up. My daddy was Scotts-Irish . Whatever, It was colemans mustard or nothing in my fandamily..

Scott, I've learned so much from you, while I hope you explode on the web, I hope you don't get to big not to answer viewers questions. I'm sure it can get so repetitive, but folks taking the time to ask are sincerely interested in your help to try to achieve what you demonstrate. the basics are what I appreciate most,... "use the tip of your knife/work the meat towards you/don't rush/no worries if you make a mistake/ knife skills. all this and answering folks is what brought you to the dance. stay grounded my friend, and thank you. Scott, absolutely brilliant. Thank you. I noticed there were 2 glands under the shoulders. If left in by mistake, would it ruin when cooking. I hear the same about pork. Please can advise me as I plan to start buying my meat in bulk via a whole carcass. Thank you for sharing your skills.

My first home grown lamb took me 2 days to butcher from a book! 30 minutes, freakin' brilliant! If I can replicate this in 2 hours I think I'll make myself a badge. Thanks Scott, you rock.

@Scott Rae thanks mate. Very cool. Me and a friend did our first lamb with this video (had to pause and rewind a few times so I’ll never get the smell of lamb out of the laptop 😜). Have to confess that we struggled to break down the shoulder area but that’s our lack of experience. Love the channel so we plan to do a few more lambs before we do a deer.

@Scott Rea can you do a video how to produce of cannon of lamb. from the very start. I am in training to become a butcher and your videos are the best. My teacher for my apprenticeship even said he watched you when he was training. He is in his early 40s. Even he won awards in competitions. Keep the hard work for teaching the next generation of butchers.

My dad 82 we sold butcher shop 5 years ago , he wants to buy another he misses it all , our style is New Zealand for beef broken down from the hook, pulls off like cellotape, lamb bones breast many insist to in out the bones. To save money , dad cuts those in a few minutes hyper rapid butcher, but now 82 not as fast , u cut great nice to see

I butchered my first lamb today, following just your videos, from tools to execution. Thanks! I really enjoyed it! I think though that I tried an animal a bit small (13 kg meat). What size of lamb would you suggest is best to do a nice butchery? Thanks again!

Hey Scott. New Zealand here. I find this video absolutely fascinating. I used to live in Oxford, UK, and I remember when we had a leg of lamb for Sunday lunch, it came with the knuckle still attached. Does this still happen? Also, since I have lived in New Zealand, (moved here 2005) I haven't been able to find a shoulder of Lamb that easily. I wonder why? I used to use it a lot when I made a curry. You simply cannot buy a shoulder joint in our local supermarkets. GRRR! Anyway, thank you so much for all of your videos. I love them!

Hi Scott, love the videos! I've been watching one every night for about 6 months. Now my 4year old daughter watches with me. This vid is her favorite. She says she wants to watch "it's all about the lamb baby". Deer season opens here in Maryland, USA in a couple weeks. Do you have any vids on how to wrap meat for freezing after butchering? Scott, I am Brazilian and always watch your videos over the internet for his youtube channel. I would like to congratulate him for the posts because I am an inveterate carnivore and whenever I have time I present me with a barbecue. I would like to see him boning an alligator if possible. Incidentally, all the animals that you show in your videos are a bit hard to find in normal butcher here in Brazil and when you think the prices are too expensive, even for a middle class, but always giving can make a surprise for friends on the weekend barbecues. Good health and peace to you my friend and always keep in gracing with their videos.

Love your vids. Have you ever done an older sheep? I ask because I'm currently processing 2 18 month old shearling / hoggets and they are so fatty compared to all the lamb butchery videos I see.
