As a French, this list just needs one washed rind cheese (munster, maroilles, livarot...) and one blue cheese (roquefort, fourme d'Ambert...). These are strong cheeses for newbies, but you still need to try them.

Personally, I would eat cheese by itself, or with bread. You can also add to your sandwich. At any restaurant in France, you can order a plate of cheese instead of a dessert or between the main course and the dessert. But of course you can eat as you like. 🙂
Have you ever tried proper Gruyère cheese from Gruyères in Switzerland ? I mean the real Gruyère, because your comment at 7:54 tends to say you never tried either a mild or a rezent one. You should really try it. Go to Switzerland, or even to a good cheese retailer in France. Gruyère is much more expensive than Comté. And if a fromagerie sells you Emmental for Gruyère: run away. Gruyère has no holes.
