Pheasant huntin' used to be a big deal around here every year, but I've noticed during the last 15 years or so it's hardly ever mentioned anywhere. Wonder what happened... Really glad to see this!

Bird population is down in many states because of development.. here there is a well managed stocking program by the State and private groups. Ya can even bag hens here because there are so many roamin' the fields..

I have seen my mom cook pheasant in the oven for hours but I have never. Seen it done on a grill. I'm not fond of the wild game taste. But you guys made me want to try it with bacon.

Made this yesterday for supper came out great used skinless chicken thighs. Please don't revoke our chapter when I tell you this but I used a crock pot , the day was to screwed up to relax at the grill. Keep up the great work, enjoy the holidays !!

+Steve Skouson Nice! The older, the better the cure. I just cooked up some shoulder roast with pineapples, guajillos and anchos, and a bulb of garlic. Almost impossible not have it come out perfect when using that thing. I have a big 14 qt.

Most of the time the buck shot will fall out of the meat when cleaning. but not always. I always baked in foil then grill them or fry them, and never though about using bacon. OLD MAN Go my mouth watering . THAT GOT TO BE AWESOME " YUM " haven't had pheasant in a number of years... HECK YES ITS GOOD and wrap in bacon GOT TO BE AWESOME Happy Holidays Brother

May i suggest you try Karibu? Smoke it with some juniper (with the needles on) then stew it with root vegetables, smoked bacon, mushrooms, fin chopped onions, cream and sour cream. Also if you are able to get a hold of it, some lingonberries for some acid, either as a side or a couple of berries in the stew it self. Thiken the stew with corn starch if needed. You can use SPG as seasoning or ground black pepper and sea salt.

Can you get the same results from a propane stove (tower) and in the Weber can you take the lid off an get some BBQ flavor or would it dry the meat?

I cook my rabbits and squirrels very similar to this. Looks great guys. Have you ever smoked pheasant wrapped in bacon. I love it like that also!

The "gravy" would be epic with some heart, livers and gizzards cut up and braised with it then poured over mashed potatoes. I think this recipe would be really good on some wild rabbit too.

Question: I don't care for wet soupy surfaces on my meats. Would it be possible to take the meat from the pot and put it directly over the coals for a minute to dry/crisp/char the meat a bit? or would that toughen it up?

Bob, like the use of USA cookware, and from South Pittsburg, too! One question, would leaving the lid off for the first half hour or so, with some smoke wood on the fire, give this pheasant a smoky flavor? Or, doing the same in the last half hour? As always, keep them coming! steve

can we tenderize these Pheasants by marinating the meat over night then put over the coal (indirect)?

+M. Hamza You could, but the main thing is to make sure the pheasant doesn't dry out. Even in this braising recipe they wrap it in bacon. I would put it in some kind of container with a lid, to keep most of the moisture in. Hope this helps!
