How To Catch Clean Cook Parasite Infested Fish - Amberjack
Ever catch clean and cook a fish that is known for parasites!? We typically throw back AJ's of this size due to the heavy amounts of parasites, however, many people do choose to keep them. Therefore, we decided to give it a go and catch, fillet, and cook this controversial fish!
Fish Ingredients:
-Fish of choice
-Olive Oil
-Lemons
-Garlic Powder
-Salt and Pepper
Roasted Garlic and Chive Butter Ingredients:
-1 stick of grass-fed unsalted butter
-1/4 cup of finely chopped chives
-4 roasted garlic cloves
-Course Kosher Salt to Taste
-1 tablespoon of fresh squeezed lemon juice
Instructions:
1. Make roasted garlic and chive butter (soften butter and add all the ingredients).
2. Set grill to medium-high heat. We set ours to 350 degrees.
3. Season fish with garlic powder, salt and pepper.
4. Place fish on oiled grill and add butter spread to top side of fish.
5. Flip halfway through cooking (around 15 minutes for thick fillets of fish) and spread butter to top side of fish. Add lemon slice to top side of fish.
6. Take fish off grill when meat becomes white and flaky. We took ours off when probe read 150 degrees.

When I was very young, 7 years old, (1957) we lived on S. Miami Beach, across from the Intracoastal. I caught Grunts regularly from the seawall. I heard they had worms so I asked the fish guy at the supermarket about that. He said you could remove the ones you see and cook the rest! Learned how to fish on the 1st St Pier. Great videos, Y'all are the best!

That looks delicious. I only have one tip for you. When you grill, try cutting shallow lines crosshatch on the filets to catch the butter.

Love these how to videos. These fishing tips bring so much. For instance, the weight on the swivel. Such a simplified setup that works. I’ve spent so much money buying premade leaders and that is so much easier. I’ll be doing this for sure.

very nice video, also I ask my angler to point the rod tip at the fish when I am backing down so I know the line doesnt get into the prop. Allows you to steer better and take out some worries.

Got into them yesterday using a pink Shimano current sniper, lots of fun. Also fun is cutting the hooks off a top water plug and working it fast. They will grab it and hold it for a few minutes. You get a fight without having to release them.

I never keep them because for whatever reason, seems like they’re always closed in the gulf… so somebody else must be eating a bunch of them 🤷‍♂️

Nice sea donkey! But I really hate sharks! I have caught many species of sharks and returned them all unharmed. But I have always wanted to catch a hammerhead. I wouldn’t care if it was just a pup two feet long of twenty feet long. Well maybe not a twenty footer, depending on the gear it was on, but I still despise sharks. Are you ladies going to be a part of the billfish tournament in the Bahamas again this year? Sorry I can’t remember the name of the tournament but I remember seeing you two on tv last year and thinking that you looked like the Gale Force Twins! I told my wife to look and as soon as she did they introduce you my wife just gave me that look (like you big dummy) and sarcastically said “I wonder why?” So I casually stuck my tongue out at her and a pillow fight ensued. Guys, take it from me. Don’t get into a pillow fight with a woman who owns full body pillows! You will get creamed before you can get into striking range! 😂😂😂 Anyway hope to see you on the show either hosting or showing them how it’s done! 😊
