How to change your Apple iPhone device with iOS17 language from Chinese to English or any language to English or any other language. These steps will work on any iOS17 Apple iPhone like the iPhone 15, iPhone 14, 13 12 or 11 regular, Pro and Pro Max variants.
Open the Settings Gear icon
Tap the General Gear icon
Select the Language & Region option
Move the preferred language to the top position or select the blue Add Language option and then select your language.
When you select your primary language, an alert will ask you which language you want to use as your primary language.

The most important step is to select the Settings Gear icon and then the General Gear icon. One you are under the General settings, the Language option is the 12th one from the top. Then you can press and hold to drag your selected language to the top position or select the blue Add Language option to select the language of your choice.
