Have been using foil on the tray for years. Before getting a pellet grill a rep at Costco one day explained using foil on the tray and then easy clean out later. We just bought a Pit Boss and I will be doing the same on it. Only thing I might do different is no foil over the part to flame broil Steaks.

@@SmokinJazzBbq Have cooked on the Pit Boss Pellet Grill twice now. Does a better job then our old grill. The slider to flame meats. I was wondering if it is right to cook your steak for a bit and then finish it with the slider over so the flame hit the steaks or should I do that during the whole cooking?

Bob Askey i would recommend to do a reverse sear on your steaks. In other words smoke it at 200-225 til you hit internal temp of 110-115 then crank your temps gauge to high follow by searing it on both sides for 2 minutes per side (depending on the size of your steaks). Use your meat probe to see what internal temp you have at the end of searing it both sides. 130 is the perfect medium rare consistency internal temp for me. If you like more well done then sear it 3 to 5 minutes per side also (depending on the size of your steaks) This guide helps every time i use the Austin xl or any grill/smoker to get perfect steaks! @@SmokinJazzBbq Great thanks. I'm trying to use all the options on this Pit Boss 820 Pro Series. So far it has been doing a good job. I also looked at the Camp Chef pellet grills. Problem was the Camp Chef Pellet Grill only has a 22" wide grate. The Pit Boss has a 29" grate. I wanted more space and they were both the same price. The Camp Chef to get the next size was $400 plus more. Camp Chef had some great options and features. One feature was a knob to pull the cover over the flame over. I'm thinking of trying to do that with my Pit Boss if I can figure it out without making a mess.

Great video; I have the pit boss 1100 , the big one , and do pretty much the same way except; may i might add before you you foil your heat shield, spray it down with cooking spray, the cheep stuff or on sale . Both side’s, that makes clean up nicer , and cuts down on the rust !!!!

Interesting walkthrough Rico. I have never seen inside a pit boss. That heat deflector is different from anything I’ve seen. Nice video.

I found that an easy way to remind how long I’m cooking is to use an app. A new one came out that works well for me called pellet grill minder.

Hey Jazz one question do you have to remove the pellets out of the hopper or can you let them stay in until they run low,Am new to pitboss grilling and i find your page most helpful Thx bro

In general yes you can use the pellets until they run out, however you want to be careful if you are mixing different flavors. You will find that certain flavors of pellets go better with different types of meat. For example I often use apple, pear, cherry for chicken and for beef I often use a heavier profile that gives a more pronounced flavor such as mesquite or hickory.

Thanks for the run down. Have you ever used the searing feature while having foil on the plate ? Is there a way to put foil on and still be able to use the searing feature ?

thanks for the vid. i was using foil but it would burn into the metal and burn away so did it go into the food? so i asked about it on fb pit boss owner page and someone told me about using grill mats instead cause foil is bad so i got some from walmart to try it out a 2 pack for $4 i got 2 boxes and they are nonstick too and they work great now the walmart ones arent that good as far as long lasting but they work a lot better than foil. and i layer them the same way as u do the foil. i plan on buying a more expensive long lasting brand soon on amazon but im happy with them for now..

A bit of caution to those who use foil. Make sure the grease gutter (for lack of a better term) is not dammed up in any way. I found out the hard way while cooking some fatty burgers that the grease can accumulate in the gutters and cause a grease fire. It ruined the burgers with the black char from the burnt grease. Also, if you sear your steaks on high like I do, the foil can melt to the deflector.

Thanks for commenting i appreciate it. In my video i cover the sear zone and don’t use it at all. If i want to sear steaks i ll use my Weber kettle with the bbq vortex. (It gives a better sear) I have used foil for a year now and cooked plenty of fatty meats from briskets to pork bellies which contains a lot of fat that renders down to the grease trap and never ever had a grease fire. Not sure why your gutters got grease accumulating in them but every pit boss is different from each other. Sometimes as i stated in my video every 3 to 6 months i ll do a deep cleaning and get rid of any extra debris or grease gunk just so this grill can perform to its fullest potential. Do you use the sear function of the Austin XL? Would you cut out the holes in the under foil and then put they sear cover back on?

Hey cassireak thanks for asking your question. The simple answer is no lol. I dont use the sear zone at all. Its too small to use for searing steaks. When I did use it I had sear a steak at a time. If I have to use the sear zone I would take the foil off and if its salvageable then I ll re-use it if not then I ll use a new sheet. Hope this helps. I noticed that you covered the heat shield completely. That blocks the sear feature on the grill. Evidently you don’t use that feature.

Hey brotha John. Yes sir you are absolutely correct!!! To be honest i have never use that feature. I mainly use this grill for smoking only. I rather use a Weber kettle to sear meats like steak or burgers. I m gonna eventually use it for a video cook but i do mainly use the pit boss for smoking only. Thanks for watching brotha. Hey Tracy...to be honest I dont use the sear zone at all. I really dont like it lol. When it comes down to searing I just use my weber kettle. However one time I did sear some ribeye steaks and just remove the foil and the sear zone cover to sear them but didn't like it because I had to do it one at a time due to the size of the steaks. I might have a dumb question. Is it worth wrapping the actual grills with aluminum foil instead of the bottom part?

Hey brotha Luis. No dumb question at all bro. I dont personally do it but you can definitely do it. The only difference is there will be more fragments of foil down the bottom of the barrel to clean out. If you dont need to use the sear zone it wouldn't be a bad idea. It doesn't affect the temps interiorly anyway. The only thing I can think of that will affect the use of aluminum foil on the grates will be that it can tear up easily when removing, rotating or flipping the meats that might get stuck on it. Hey brotha Jared. You have a beast in your hands (PB 1100). The heat shied deflector wrapped in foil doesn't affect the smoke flavor circulation because it travels around the sides of the heat shield deflector to the top then drops down to the grate area. The foil is just a option to help the clean up job easier. If you decided not to add the foil the smoke will travel the same way. I dont knoe if I'll get an answer, but I've looked up every possible way to ask this question but still don't understand something about my austin xl. When I start it, every time it build up a huge cloud of smoke about 2 minutes after turning it on. Is there any way to get rid of that? The neighbors are getting irritated when I flood the backyards up with a giant cloud of smoke.

Sorry for the late reply I have been extremely busy at work. Hey brotha Matt unfortunately no. That is part of the start up procedure and that is your flavored wood pellets going through a combustion cycle that is giving you the smoke flavor for your meats or anything that you are smoking. Also this process will repeat it self constantly until you are finish cooking. Have you try to place your austin xl in a different area of your home? Sorry i couldnt be more of any help. Thanks for the comment. However why would you want too? Just use foil to clean the grate and cover the heat shield with foil for easy clean up. You don’t want to remove the seasoning layer that has formed. As for the smoke stack, no need, leave it alone, it’s fine. Thanks for the support and watching. Cheers and keepbbqing

Hey brotha Landon, for my grill mines get hotter on the right side. For example if you watch my chicken wings video you can see that mines get hotter on the right side. That oxidation on your flame broiler plates is 100% avoidable, gotta take care of your equipment bro. Season that shit, rub it in and burn it off. Just like owning a cast iron. Your grill looks terrible man reseason it for real. Anyways thanks for the videos I’ll use your tips, Appreciate yuh
