When the first knife hits, the eel was immediately killed. The reason why it was still moving was due to the neural reflex. The cells are still not dead thats why the body was still moving.

Morey eel is a saltwater long fish it has to come up to breathe oxygen and yes it can be used as food. However its more of an unscale fish like catfish rather that a fish with scales.

Let me clarify for you! the eel was instantly dead after the first stroke with the cleaver (ikejime). all the movements you see afterwards are muscular spasms caused by chemicals released after death. The second step, the one with the wire, is used to enter the spinal cord of the fish and destroy the nervous system in order to avoid further muscle movements that ends up producing lactic acid. The fish prepared in this way will have a quicker death (contrary to the fishing ships that will let all the fish die of asphyxiation outside the water) and the meat will last much much longer and taste much better (because they avoided those chemicals). Hope this clarifies. Unfortunately the practice of Ikejime is not feasable on an industrial scale, due to the higher workload and time consupmtion. It's used in high level restaurants.

Why not just cut the head completely off. Then you know it's dead and can't feel anything. The Chef processes it right away, so I don't see any problem (less fresh) with immediately killing it.

The purpose of ikejime is to kill the nerves so it doesn’t damage the actual meat, hanging is to let the blood drip so it doesnt contaminate and prolong the shelf life. Two different things
