Roasted Cabbage with Chickpeas and Tahini Sauce
Ingredients:
• 1/4 medium cabbage, cut into slices
• 2-3 tbsp olive oil (for roasting)
• 1/4 tsp salt
• 1/2 tsp oregano
• 1/2 tsp paprika
• 1 head garlic
• 1 tbsp olive oil (for garlic)
• 3 tbsp breadcrumbs
• 3 tbsp grated Parmesan cheese
• 1 cup cooked chickpeas
• 3 tbsp tahini
• 1/2 tsp salt
• 1/2 tsp black pepper
• 1/3 cup frozen vegetable broth (or water)
• 3 tbsp lemon juice
• 2 tbsp olive oil (for tahini sauce)
• Paprika (for garnish)
• Extra chickpeas, fried (for garnish)
Instructions:
1. Prepare the cabbage:
Slice the cabbage into wedges and secure each slice with a wooden skewer to hold its shape. Place the wedges on a baking sheet lined with parchment paper, then spray or brush with olive oil.
2. Season the cabbage:
In a small bowl, mix 2-3 tablespoons of olive oil with salt, oregano, and paprika. Drizzle this mixture evenly over the cabbage slices.
3. Roast the garlic:
Slice off the top of a whole garlic bulb, drizzle with 1 tablespoon of olive oil, wrap it in foil, and place it on the baking sheet with the cabbage.
4. Roast:
Bake both the cabbage and garlic at 200°C (400°F) for 30 minutes.
5. Add the breadcrumb topping:
In a small bowl, mix the breadcrumbs and grated Parmesan cheese. Sprinkle this mixture over the roasted cabbage and return to the oven for another 15 minutes until crispy.
6. Prepare the tahini sauce:
In a blender, combine the cooked chickpeas, tahini, roasted garlic cloves, salt, black pepper, frozen vegetable broth (or water), lemon juice, and 2 tablespoons of olive oil. Blend until smooth.
7. Fry the chickpeas:
Fry a handful of cooked chickpeas in a bit of olive oil until crispy, and set aside.
8. Serve:
Drizzle the tahini sauce over the roasted cabbage, sprinkle with crispy chickpeas, and dust with paprika before serving.
