How to cook braised pork belly

Cooking instructions:
1. Cut pork belly into about 1 inch wide pieces and place in a pot of water
2. Boil the pork belly pieces for about 1 minute
3. Drain the water out, wash and drain again
4. Add 1 tablespoon of oil to a pot, stir in sliced ginger, dry cinnamon sticks and star anise for about 1/2 minute
5. Add drained pork belly to the pot and stir fry for about two more minutes on high heat until some pieces are golden
6. Add 1/3 cup of Chinese cooking wine, 3/4 to 1 cup of soy sauce (use less for less sodium), and 1 tablespoon of dark soy sauce for color
7. Then add 1 tablespoon of sugar and 1 cup of water
8. Mix well, cover the lid and cook on medium heat for about 45 minutes
9. When done, add some fresh chopped green onion before serving

I use about 2 lb of pork belly purchased from Costco, they don’t have the skin. If you want the kind with skin, consider getting them from an Asian supermarket.
