I have 25 pounds of liver that I am turning into smoked snack sticks to munch on while I am hunting. People certainly need to make better use of the animal's resources as you gentlemen did.

If you cant eat it all, whizz it up in a good blender, onions and all...maybe a little wine, stick it in a container and eat it on saltines. Fantastic :)

1.) suggest white onion or yellow onion over red onion, red onion isn't a very good 'cooking' onion, they make better raw onion additions such as in salsa's, sandwiches, salads, guacamole mixes, dips, etc 2.) buttermilk is great for older deer, helps remove that taste, you can also use unflavored yogurt for the same effect, yogurt imo does a better job though. You can also add a few seasonings to this mix, I prefer adding some cumin and turmeric. If you do use buttermilk or yogurt I suggest doing a 2-3 hour brine in salt water or lemon water before rinsing off and patting dry then switching it the yogurt/buttermilk this allows for the blood to be fully leached out before going in and allows for deeper penetration as it sits in the dairy overnight. As a plus if you use yogurt (my preferred) you can turn it into a nice sauce by simmering it on the stove separately and adding seasoning to it and use it like a gravy. cant figure out what to do with the buttermilk other than throw it out afterward. 3.) to help beat that gaminess when cooking use fresh rosemary, thyme, and sage in addition to the other seasonings you like when frying.

Growing up, deer was a pest. Family friends would hunt on our farm so we always got invited to the hunter parties. It's funny the things you end up missing. Defeats the purpose but wish I could get game meat at the store. I eat pork liver semi regularly. With mushrooms and onions, or in an omelet, but never had deer. Americans should eat more offal or off cuts. Liver, heart, tongue are some of the best eating on an animal. Using liver for catfish bait is funny, I knew a guy that said he used shrimp lol.

I do a 1 pound liver to 10 pounds in my grind. I’ll also eat a small chunk raw Warfield dressing just a creep people out probably why I’m alone.

The answer is only if it is farm raised. Wild game cannot be bought or sold. Best bet, just find a hunter in California and see if you can get them to save you a liver. Most hunters don’t save them. Maybe offer to help them pay for their deer processing

Bacon grease or lard try not to use plant oil Liver hart and kidney should be well trimed I keep all trimmings from the carcase plus the lungs to grond for pet mince

I’ve never saved a deer liver, but I really like beef liver. I watched Dr James Kroll talking on deer liver in a video. When he started cutting a liver, he kept coming across liver flukes. After seeing all of those flukes I was surprised and truly turned off. I’ve had no interest in eating deer liver from then on. You can all eat as much deer liver as you want, I’ll pass.

We completely understand your point of view. When we notice something strange going on with the liver like flukes we usually don’t keep it. But I will say we enjoy beef liver but deer is by far not as strong of a flavor like beef.
