We are back with the How to Cook Hungarian Goulash Soup Properly [Goulash vs Goulash] to the Goulash recipe as some confusion is around. The Hungarians refer to the Goulash Soup when speaking about Goulash, while internationally the Hungarian Beef Stew is known as Goulash.
Here in this video I am sharing the recipe of How to Cook Hungarian Goulash Soup Properly, after the pervious video where the Goulash as Goulash Stew recipe was shown.
The basic recipe is identically same as the Hungarian Beef Stew's, the differences are the more liquid soupy consistency and the added vegetables.

Ingredients for 2 portion:
300 g Beef shank
180 g Onion
2 cloves of garlic
1 tbsp sweet paprika powder
0.5 pc small tomato
0.5 pc pepper
salt, grounded black pepper, caraway seed
oil, water
1 pc carrot
1 pc parsley root
1 pc potatoes
0.5 pc parsnip
Hungarian chili peppers if you like spicy ;)

Hi Folks, I am real bad guy of RU-vid, dehonesting all like-to-be cooking youtubers. But this guy knows what he is doing. I just finished this recipe and it works perfectly. Here in Czechia we prepare Vienna-style goulash with dumplings or rice (those who visited Prague already know, what I am talking about) But this original Hungarian recipe is so different and so much better!!! Try that exactly as this guy on videos does that and keep quantity of ingredients.

As a Slovakian I approve your accent and your goulash as your original dish and there is not other goulash only Hungarian and then butchered versions.

Hey! As a hungarian, Iam extremly picky with Goulash recepies, but everything is in the video is 100% traditional and authentic (well maybe not the type of pepper, but that is hard to put your hands on, outside of central europe)

Since you are Hungarian my question to you is what do you or other Hungarians think of american goulash which is basically noodles and tomato sauce and more like a spaghetti type think incase you are not sure which I'm referring to

@@MultiDryder I saw some US versions of European dishes...to be honest, forget Your versions. Especially when there aresuch great US recipes like Jambalaya, fried chicken, cowboy beans etc.

@@petrmasek6353 Right? To me, the porkolt version is similar in origin to American "chili" (cowboy meat stew, which did not have beans). I refuse to let apartment-origin "hamburger helper" type recipes to represent.

I'm hungarian. This recipe is correct. In hungary we roasted with pork fat, not vegetables oil.

When i was in hungary i was taught to not use any water, the best way to do it is to use about 3x the meats weight just in onions, so the only liquid is onion juice and pork lard, that way it has an incredible strong taste.

That must be the recipe of the pörkölt, which is the base of the goulas, but also we eat that kind of food with galushka or pasta. It is also called goulash outside of hungary, but we call the soup one goulash only.

Outstanding video. Thank you. The only thing I would add is to put more emphasis on the reason for and importance of pulling the onions off the heat before adding the paprika. The powder is so easy to burn if you skip that step.

I made the recipe exactly like this, it's excellent, but what's definitely missing is acid. Onions and carrots are sweet. Add vinegar or lemon to create a flavor explosion

Great video. I made my first attempt at goulash last week based on a danish chefs video, but I will definitely try this one out soon. A few comments you can consider for future videos. Maybe tweak the pace a little when going to the 'wrong way of doing' clips. It was a bit confusing at times. maybe even adding some grey color tones to emphasize the difference in the clips. I don't know for sure, I just found the changes a bit odd. Could of been one of your other videos, watched a few today. I would love more Hungarian dishes. Maybe Chicken Paprikash? Thanks from DK

What do you say to pork instead of beef ? I prefer pork because it doesnt need to be cooked so long to become soft and also like the taste a bit more. Great video btw. Kepp it up 👍

Why not! Cooking is always a matter of preference 🙂 Pork definitely will result different taste, and we also use it with the same recipe just with less onion..and we call it just stew 😄 Enjoy!

The only right way, is to cook your paprikas properly with the onions without burning it(he did well explaining and displaying the method), and making sure you have a soup consistency once finished. Caraway seeds certainly are used in the vast majority of recipes, but not all. Personally never tried parsley root, will give it a go. Marjoram is also quite popular to add. As for the meat and veggies, goulash is flexible. I’m surprised he went with beef rather than pork considering how adamant he was about being traditional, but it’s not wrong. Don’t have potato’s? No problem add a yam instead or leave it out...

Due to its name, goulash soup is originally made from beef. After all, the "gulyás" guarded the cattle herd, the "kondás" guarded the pigs. And it's not "kondás" soup. Here in Hungary, households make it from pork, because beef costs three times as much as pork. But if the price of the two types of meat were the same, believe me, everyone would make it from beef. Unfortunately, not everyone can afford it. And the presented recipe is the basic, traditional recipe, you need everything that we saw in the video.

@@ProperlyCooked As a chef you don't know what is canned beef. Canned beef is beef cooked in a sealed jar for 5 hours, no water just beef and a pinch of salt., some people add herbs/spices. It's a way of preserving meat that has been around for hundreds of years, its 100% natural not the muck you buy in shops. I was looking for a new recipe that's why I was asking your advice. Maybe you should ask your mother or grandmother I am sure they would know.

@@lk6789 not really. this way of preserving meat is not part of our food culture. shame on me, I never heard of. we preserve meat by curing, smoking, confit and drying. the canned meat as i understand is processed. if you want to cook goulash, I strongly advice to use fresh meat again, with the canned meat you will have completely different result. which is far from the original one if thats the thing you look for.

Sorry it's been deleted due to video quality issue. You can use this recipe as it's exactly the same procedure, just more onion 2 onion to 3 meat. So it results more sauce for the stew.

Looks good. I think the only thing I'd change would be to sear the meat first in the pan before doing anything then remove it and readd it and it's juices back at the step where you would normally add it in.

:D I do. thats why you can understand what I am saying. Imagine that I am learning english from scratch. do you speak foreign language? do you pronounce like native speakers do? or you just expect everyone else in the world to speak as clear english as you do?

@@ProperlyCooked I’m Dutch and yes, my pronunciation of English one could consider as near native. Especially when posting on social media I think it’s almost mandatory to focus on that. Ok for me that would be easier probably, since I’m a graduated BA certified English teacher. Your mother tongue will always interfere with a correct pronunciation obviously, but there’s a lot you can do to minimize this as much as possible. Maybe for Hungarians that’s harder to do than for Dutch , due to the difference in how certain vowels sound etc. It’s possible, but I’m not sure.

I am not uploading to youtube enough video either. I need to increase the quantity, and the quality in order to succeed... not even to mention my full time career... improving is the way, thanks for the feedback! time and effort works for us

@@ProperlyCooked Oh but I think you’re cooking is great! I’m not much of a cook myself haha. Ever since I moved to Indonesia a few years ago, one of the things I missed was soup. As opposed to Europeans, Indonesians don’t really know what that is. So I decided to give it a go and try to cook it myself (I used to buy soup at the supermarket). Following your instructions it turned out perfectly, so thank you for that!
