I made this recipe and used the drained butter and oil from the onion to fry the liver (as per a suggestion in the comments). It was delicious and simple. My kind of recipes! Thank you The West Country Kitchen for sharing. Love you channel..p.d. as mentioned in the comments, maybe if you would never mind the music, it would be easier to follow : ) I agree!

Nice content there Jim, I love the soothing voice and style... I haven't had liver since I was a kid, and didn't fancy the taste of it back then. I'm considering giving it another go, as it's very nutritious and economical. Could I add flavours such as garlic, mustard and lemon juice perhaps? I've also heard that soaking the liver in milk prior to cooking removes some of the "harsh" taste?

Thanks very much 😊I appreciate it, You definitely should! I made a video about soaking Liver in Milk so It's worth a shot and also instead of Lemon J you can add a splash of Balsamic vinegar just before you remove it from the pan

Look delicious. I've always been told that you shouldn't cook with EV olive oil, but use it for dressings, because it's too pure for cooking. Any thoughts on that?

So despite the voice over I actually use regular Olive Oil to cook and extra virgin to drizzle etc, but having said that I have known a few top Italian chefs who cook with EV and there food is stunning so I don't think there's any problem with it at all 👍😊 Thanks for the good question

How do you cook liver in boiled water or pressure cooker, without any additives or marinates so it is tender? Also, how do you cook chicken breast using these methods so it is soft as well? I tend to have rubbery pieces.

I probably wouldn't boil Liver or use a pressure cooker, pan frying will give the best results! 😀 and I will be making a video showing how to do nice juicy chicken breasts, and also perfect roast chicken 😀👍

sorry but that's not remotely caramelised, it's not even light brown. give it time! 40-50 minutes on really low heat

You are absolutely right :-) however, my mistake is not in the cooking but in the video information, they are not supposed to be caramelised! the recipe is an old classic from "Harvey's" Marco Pierre Whites original restaurant, you cook them quicker in a ton of butter so you get the sweetness but you want to retain some acidity which together with the W W vinegar cuts through the dense richness of the liver, traditional caramelised onions would not have the same flavour profile together with the Liver... I'm really glad you took the time to comment, I need to work on explaining things in my videos allot better :-)

Really shouldn't be cooking with olive oil ,it gives off toxins ,use coconut oil and butter instead ,Virginia olive oil is for pouring on salad and potatoes etc or making a vinegarett

You can use less, but similar to with a steak you may use more to cook with than you end up eating, but yeah, you can definitely get away with using less than I've used 👍

​@@thewestcountrykitchen6843 With a steak the butter is used to baste, not necessary for onions as you can simply stir them. Also with steak, everything left in the pan can be used to make a sauce. Not trying to be a wise guy but lets do better with not wasting food! 🙂
