Taiji-San, I have been to Kyoto numerous times and tried the Okonomiyaki there and your recipe was astonishingly FANTASTIC! - I've made this dish before after watching street vendors prepare it in the mornings in Tokyo and Shibuya but your simple, straightforward and very practical recipe reigns supreme. I know living in Germany poses some challenges for ingredients but your substitutions worked great. My wife loved the dish and my daughter (a English teacher who lived in Japan and Germany too) can hardly wait to have some as well. I totally adore your program and the superb education that comes from it. The recipe's are dynamite! - Domo Arigato and Viele Danke!

I have visited Tokyo nd other parts during my younger days. My favorite food is Japanese nd learned to cook some. Sashimi is my comfort food.

Taiji-san, for your substitute okonomlyake sauce try using two tablespoons of oyster sauce instead of the soy sauce. I think you will find the flavor and thicker texture to be closer to the bottled sauce. I find Kewpi mayo to taste so much better than regular mayo that it is worth the trouble to search for and order it on line. The nozzle top makes it easier to apply as well. Love your channel! Love Japanese food and culture. I lived in Japan for four years. I tell my friends here in Maine, USA that Japan is the most civilized country on earth.

I just wanted to say that I cooked your recipe of Okonomiyaki for dinner last night (down to the Kewpie Mayo lines and bonito flakes!) and it was a success! My family loved it. I had to go to the Japanese store here to buy a lot of the ingredients. Fortunately, they had what I needed. I think the most difficult part was turning the Okonomiyaki. Everything else was not difficult at all. Thank you for showing us this “how to”. I’ll be trying your Baked Salmon next! Nochmal vielen Dank!

Also…glad I just found your channel recently! Great videos! I always ate Japanese food and only made udon, Hawaii-style saimen/ramen. I did make okonomiyaki and it was good! I went Osaka in 2018 and loved it!

I made some okonomiyaki some months back and it was delicious but it wasn't as soft as this I think I used too much batter vs veg. Also love the idea of lots of green onions with the batter. I put cooked shrimp in mine. It was really good but would love to try your method. I am also in the US so I appreciate the simple substitutions. I just recently subscribed to your channel and love your recipes. Thank you for sharing! 😃♥️

Excellent! I thought the recipe had a lot more eggs in proportion to the vegetables but this looks perfect.

Ahh! Taiji-Kun! You are using the technique! When I was learning to turn eggs or "cachapas" (a traditional Venezuelan dish) I turned them with the same technique, slowly placing it in a dish and then turning it on the pan on the other side so it would keep its shape! You are not afraid to turn it! You are smart!

I made this dish with a Japanese friend many years ago, we used full sheets of bacon and added little tako pieces, it was sooo delicious! I remember we also added some grounded white root vegetables to increase the stickiness and thickness of the batter. Do you know what is it called? My friend picked out the ingredients, I forgot about it.

It is called NAGA-IMO=Long Yam or TORORO-IMO=Gooey Yam. BTW it has a lot of oxalic acid so be careful handling it if you have sensitive skin while you're pealing the skin and grating the yum. Don't let the raw yum touch your lips as it would become very itchy and swell.

Just went to an Okonimayaki restaurant here in our city in Germany a couple of days back and really loved it. The last time we had it was in Osaka. I especially liked the one with kimchi in it. I didn’t think it would taste good but it really went together well. Thanks for this video. I’m two years late but I’ll still try this recipe soon. I’m crossing my fingers that it will be a success....

As he mentioned OKONOMI means whatever you like, so you can add any ingredients that you like and try it out to see if you like it. The only must is flour water and cabbage and of course Mayo and Sauce.

Hi Taiji, I live in the US and there is a Japanese shop near my house. Today I went there to buy mayonnaise and okonomiyaki sauce. Next to the sauce was okonomiyaki flour. Is this flour better or it doesn't matter?

It's easier bcz all you need is a bit of water to mix but OKONOMIYAKI batter is so very simple if you have all purpose flour and egg (optional) and water I don't even add baking powder in mine.

Ssoo funy that Japanese ,and in general Asian food that is consider street junk food,is still way better and healthier than what is consider healthy food in North America!!

It's a well known fact that US citizen don't really have an healthy food culture. Too much sugar everywhere, too much transformed products, no real bread, no label to protect local food or trace the way each product are made, confusing explanation on each product, etc But what shock me the most isn't the non healthy food but the fact that apparently, people of the same house don't eat that often together. I've ear about it from time to time but i don't know how far it's true. i guess for a lot of american, eating is just someting you have to do when for me it's almost always the best moment of the day. PS: In France where i am, nearly noone i know considere Japan cuisine as street food unlike chinese food (and it's unfair because chinese cuisine seem very diverse). But i guess like the US, we have a lot of all you can eat chinese buffet, where quality of the product are questionnable at best. When in the other side, most Japanese restaurant are sadly about sushi.

1:34 It's pronounced "Wor-ster-shire" in case you and anyone else needed help with it. It's super hard to pronounce but once you get the hang of it it'll be almost natural to say. It took me almost 18 years to finally learn how to pronounce it properly, lol.

None of the Rs are pronounced. It's more like WOOSTA-shuh, with the oo as in "book".

The catsup one might be better on katsu…..the kewpie mayo, okonomiyaki flour and sauce you can get on Amazon. I had to get my things that way. But it’s pricey.

okonomi flour is not that different from regular flour, so you can make it without it, like I show in the video.

Is it baking soda or baking powder? Baking Soda is Natron in German. Baking powder is Bacckpulver two different items.

What is the difference between dashi powder and hondashi powder?

Basically the same just different brand with slight variation in ingredients. However Hondashi poeder is more granules than dashi powder so it maybe gritty.
