Tortang talong or eggplant omelette. The eggplant initially cooked either by boiling, grill, or roasting. Then fry with egg mixture with variety of preferences of ingredients and spices.

4 pcs Eggplant
4 pcs Egg
1 pc medium size Onion
1 pc medium size Tomato
2 pcs Green Chili
2 pcs Green Onion
Cooking Oil
Salt & Pepper to taste

Dip the eggplant well on egg mixture then on the pan let the egg mixture cooked a little at medium heat before adding the eggplant.
