How to Cook Salmon Adobo - Adobong Salmon Ulo Belly at Laman

Adobo is one of the famous dishes of traditional Filipino Cooking. Its either chicken of meat. But this time, I am sharing with you the all-time favorite dish of my friends the Salmon Adobo. They use to request this every time there is a potluck party. And now for just 10 minutes of your time, you will learn how I prepare this dish. Please see the ingredients and how to cook below.
Salmon Adobo
Cooking time 45 minutes
Yield 3 to 4 servings
Ingredients:
750 to 1000 grams of mixed salmon parts (belly, head, meat) or combination of two
6 cloves of finely chopped garlic
1 medium finely chopped onion
50 grams ginger slice in thin strings-like
2 leaves Laurel
½ tablespoon brown sugar
½ table spoon laurel
½ teaspoon ground black pepper
75 ml white vinegar
75 ml of soy sauce
50 ml oyster sauce
50 ml of fish sauce
Pinch of salt ( to balance the salt and sour of Adobo)
1 glass of water (250 ml)
2 to 3 tablespoon of cooking oil
For the Adobo sauce:
In a medium bowl, mix together vinegar, soy sauce, oyster sauce, fish sauce, pepper, paprika, brown sugar, and a pinch of salt and set aside.
How to cook:
In medium-high heat, pour 2 to 3 tablespoon of cooking oil in the heated wok. Put the inion until it gets light brown. Put the garlic and continue stirring until all gets caramelized. Now put together ginger, green chilies and Laurel leave. Continue stirring for around 7 minutes so.., then our the Adobo sauce into the wok and add the water.
Boil for 10 to 15 minutes. Taste the adobo sauce if it needs more vinegar or soy sauce and add accordingly. Now place the chunks of salmon one by one to the sauce and make sure they are half-submerged to cook that side and after 5 to 7 minutes you can turn them over carefully to cook the other side. Lower the heat to avoid the Adobo sauce from drying. You can do the turning over two to three times along and shaking the wok once in a while to evenly distribute the heat and the sauce to the salmon chunks. after 10 to 12 minutes the Salmon Adobo is now cooked and ready to serve. You can serve this in hot white or brown plain rice and a serving of green salad.
