Ingredients:
Serves 4 - 5 pax
Preparation of calamari (squid)
-------
280g of squid
A few dashes of white pepper
1/2 teaspoon of salt
1 tablespoon of Chinese white rice wine
1 egg
2 tablespoons of cornflour
4 tablespoons of tapioca flour
Some tapioca flour (to further coat the coated squid)
Other ingredients
------
4 cloves of chopped garlic
1 piece of red chilli - deseeded & chopped
1/2 teaspoon of salt (add more to taste)
1/2 teaspoon of white pepper (add more to taste)
Some chopped spring onion

Made this tonight..with a few slight adjustments. Instead of corn flour, I used tempura flour and didn't dip in additional tapioca flour before frying. Double fried as well. In my seasoning, i used black and white pepper with a little bit of sugar as well. Sauted in garlic and green onion. Man oh man..this was delicious. The texture of the squid was so light and airy..even with a double fry. Thank you so much spice n pans for another excellent recipe! ⭐

I can't wait to try this! It's hard to believe that I've been cooking Chinese dishes for my Chinese wife and I have never used Tapioca flour! We have it in the pantry, but I have never used it! Looks like I have a reason, now! Great videos, thank you for sharing and keep them coming!

U also can add salted egg yolk, butter and curry leaves.. Similar frying squids, just adding the ingredients..

Corn is harder while tapioca is also kind of starch they are really light. 2 hard 4 light starch crispy and not hard batter.

IS the corn flour CORN STARCH? Or real corn flour? Do I buy the cornstarch Or buy corn flour? It’s similar but different in. Olof and yours looked like cornstarch. Just want to be sure.

Excellent recipe! This is the best one I have found online and exactly what I was looking for. It tasted almost exactly as the best Salt an Pepper Squid I've had which was at a small restaurant on Toorak Rd Sth Yarra, going back about 30 years ago now. They also used to serve it with a side serve of extra salt and freshly chopped red chillies to dab into for the extra saltiness and chilli punch. Many compliments were received when I served this at a dinner to my guests. Thanks for sharing!

Just to let you know I made this yesterday and I can’t even describe how delicious it was. My favorite part was the batter it didn’t soak too much oil yet crispy and soft but not too hard. Perfection...

If you put it in the oil how long do you fry it. If making plain garlic and butter herbs in rings how long do you keep it in the fire. Coz mine always becomes rubbery. Please help. I love your dishes.

Looks delicious, but a total of 1 tsp of salt for this small amount of squid? Perhaps you should call it "Salt with Calamari and Pepper"???

This looks like the perfect way to prepare calamari. The crosshatch cutting of the inside is a step that would take some time, but seems to be one not to skip.

mine doesnt crispy 🤣🤣🤣 maybe because i didnt fry it in high heat. and i didnt measure the tapioca. i added salt and msg (mushroom) to the flour and it taste amazing!!!

i tried this but during the final step where we toss back in the squid, the red chili/garlic does not stick well to the fried calamari...why is that?

Is it alright to prepare the squid in wet batter and leave in the fridge for like 4 hours before coating it in tapioca flour?

Yes you can but please mix the batter and squid again before coating with tapioca flour. Also note that as squid releases water, since you’re leaving them in the batter, try not to make the batter too runny. Hope this helps. Happy cooking

Spice N' Pans they loved it. When cooking your recipes, they always love they flavour, describing what they can smell or taste. Edit, do you have any tips to stop the splatter? I get explosions of oil splatter every time I fry squid....

Hi Wimal . If you don’t have tapioca flour, you can also use cornflour. All purpose flour is not good for this recipe as the crust won’t be crunchy enough. Hope this helps.

Made this today for lunch as it is Good Friday it was fantastic even though I could not get fresh calamari I had to use thawed out squid hoods, I did cheat and put a bit of MSG in the batter thanx for uploading Roland

Looks great! From my many visits to Chinese restaurants and ordering the same salt and pepper squid, I noticed that the meat is much thicker. Are the restaurants using larger squid, or substituting with cuttlefish?
